Delray Beach, Florida, What’s Going On?, Activities, Events, Village By the Sea, South Florida, Palm Beach County

100_4703

I found myself thinking about Delray Beach.  I guess the weather today in the Delmarva Peninsula has not been the best.  But, why am I complaining?  It has been so beautiful for the past couple of weeks.  I guess I do not want it to change.  I don’t like when it gets dark so early and takes forever to get light in the morning.

I look forward to visiting this Village by the Sea in Palm Beach County.  It is really a fun town; enhanced by its residents.

100_2431

I have a lot of expectations for the upcoming season in Delray.  This town has fabulous restaurants and I want to see if they are still as good as the last time I was there.  Most of the restaurants have “al fresco” dining and on warm evenings it is the best feeling to let your meal settle and your conversation flow while relaxing in a comfortable atmosphere.

100_2434

Following is a list of the restaurants that I have reviewed this past year in Delray and all you have to do is click on the month under Archives and scroll down to the date, if you would like to read the review.

Shrimp & Sausage Red Rice, Recipe, A Southern Dish, Gluten Free

I cut out recipes all the time from different magazines and publications to try them when the mood strikes me.

The other night I felt like this recipe had enough kick to start the evening.  I really made this recipe my own because I did not have all of the ingredients; a little substitution here or there still made the recipe one that I would like to make again.

Shrimp & Sausage Red Rice

3 tbsps. bacon drippings

1/2 cup chopped onion

1/2 cup chopped green sweet pepper

1 small jalapeno pepper, seeded and finely chopped

3 cloves of garlic, minced ( I used 1 clove)

1/2 tsp. dried thyme

1/2 tsp. crushed red pepper

1/2 to 1 tsp. kosher salt (optional)

1 14.5 oz. can whole tomatoes, crushed

1 rounded tbsp. tomato paste

2 cups chicken stock

1 tbsp. butter

1 cup long grain rice

8 oz. andouille or cooked, smoked chorizo sausage, sliced in 1/2 inch rounds

1 cup sliced fresh okra

1 lb. medium peeled and deveined shrimp (I bought the easy peel shrimp)

Well, now I have to tell you that I could not find okra in the market the other day, I forgot to buy the jalapeno pepper and I did not use tomato paste because the can I had in the house was questionable regarding the issue of gluten free. Instead, I added 1/4 cup of tomato bisque that I found in my cabinet.

Oh, I did not have a green pepper either so I substituted roasted red peppers instead and added a 1/4 cup of sliced, green salad olives with peppers.  Hey, it really was good, though.

In a large skillet heat bacon drippings.  Add onion and cook over medium-low heat without stirring for 5 minutes.

Add the sweet pepper, jalapeno, garlic, thyme, and crushed red pepper.  Sprinkle with 1/2 tsp. of salt, if you want to and a few grinds of black pepper.

101_0040

Cook over low heat for 8 to 10 minutes or until onion and pepper are soft but not browned.

Add tomato and tomato paste.  Stir in stock; bring to a simmer.  Cover and simmer for about 15 to 20 minutes.  Taste for seasoning; it should be highly seasoned to flavor the rice.

In a heavy bottom pot or heavy 12 inch skillet heat butter over medium heat until melted.  Add rice; cook stirring constantly for 1 to 2 minutes until the rice becomes translucent.

Carefully stir in the hot tomato mixture.  Cover quickly and cook over low heat for 20 minutes.

Add sausage, shrimp and okra, mixing in gently with two forks.  Return cover and cook 15 minutes or until the shrimp is opaque and most of the liquid is absorbed and the rice is tender.

101_0041

Remove from the heat and let it rest for 3 to 5 minutes before serving.

101_0042

101_0044

Serves 6.  Just add a green salad or green steamed vegetables.

Note:  To crush canned tomatoes, just put them in a bowl and with your hands break them to pieces.

Andouille Sausage is from French origin and it is mostly associated with Cajun cooking.  It is spiced and heavily smoked.  The one that I used in the above recipe was also gluten free.

As you can see the recipe was a little different but cooking is sometimes not an exact science; the right ingredients even though they might be substitutions will still make a great meal; if it is cooked from the heart.

Atlantic Cellular, Verizon Wireless, Authorized Agent, Lewes, Delaware, New Cell Phone, Too Connected?, Delaware Beaches

101_0039

101_0038

As I sat to write this post on Tuesday evening I was not sure how I was going to approach it.  But, right in front of me were my new phone and my new camera.  And guess what?  Both of them are now bigger and wider; not slimmer like the ones I have seen other people own.  I wanted them that way.

For all my posts the camera that I have been using is a Kodak Easy Share.  This week I got the Kodak M850.  It is slightly bigger but it handles well and it has better capabilities.  But this post is not about Kodak; it is about my experience of getting a new phone from Atlantic Cellular in Lewes, Delaware.

I remember many years ago when my kids were in the lower grades.  Apple Computers came to the Delmarva Peninsula and chose 4 families for a documentary on the importance of computers in schools and in the home.  My family was one of those who was chosen.  During the filming in our home one of the Apple Reps. started explaining how this documentary would be shown in schools across the country.  Then, he mentioned that when computers are bought, they immediately become obsolete because new technology is on-going all the time.  That people only use a fraction of what a computer can accomplish.  But, what stayed with me was that he also said that people should buy computers for their needs; not just because it is the new one; the more sophisticated one.

101_0037

101_0033

I am sure you are thinking o.k. then what?  I have applied that concept to my cell phone.  Just like everyone else, I cannot live without my cell phone.  What was I thinking when for so many years I resisted getting one?  It has been a long time since I thought that way.  But, my first phone was bought for emergencies.  Not soon after that, I was talking all the time on it and yes, I was hooked.  What can I say?  Then, texting and more texting.  My kids were regreting the fact that they showed me how to text.

And I was regreting the fact that I was so accessible to everyone, including them.  In the grocery store, in the car, in Church, you name it, they found me.  And how about cell phone etiquette?  Restaurants, people texting at the same time they are talking to you.  Oh, please I would love to say it isn’t so but the fact of the matter is that it is all around us.

Then the cell phones got smaller and slimmer.  I could not find it in the pocketbook.  It would keep on ringing; another missed call.  So, last week when I went to Atlantic Cellular I saw a phone that reminded me a little of the older ones; it was fairly new, though.  I decided that next time that’s the one I would get.  It felt like I was holding a phone in my hand.  And, that phone was going to be easily found among all my lipsticks, wallet, checkbook, brush, notebook and the occasional book that find their way inside by bag.  Thank God I found it.  My upgrade was not going to be until October 9th.  I had patience, I could wait.

101_0045

Upgrade; oh yes, that’s another subject.  My husband and I have the oldest phones because our upgrades have been taken by our children.

You can ask Mark D’Ambrogi; I have known him for many years.  He is a Sales Associate with Atlantic Cellular, 18376 Coastal Hwy., #1, Lewes, DE 19958.  Tel. 302-644-2644.  Atlantic Cellular has other sales associates but I only deal with Mark.  The moment he sees me coming in he knows that he probably has to send a cell phone to my kids somewhere in the United States, asap.

I have been a customer of Atlantic Cellular for so many years.  They have been in this location for about 18 months; in the area for about 15 years. There is another location on Rt. 24. That telephone is 302-945-3334.  The new location in Lewes is very bright, comfortable, the sales associates are friendly and knowledgeable.

 101_0030

I told Mark I was coming back for a new phone, but guess what?  One of my children had his phone stolen and then told me that there was an upgrade available and he took it.  He needed to replace the phone immediately so he did it where he is currently residing.  Not again!!

I needed a new phone so I decided to go ahead without the upgrade.  The one that I got was the Casio G’z One Brigade.  Tough little phone with all kinds of applications but all I need this phone to do is make calls, text and take pictures, as well.  It is rugged, resistant to dust, water and shock.  Like I said before, it is heavy but feels good in my hand.  My husband says it feels like you are holding a brick.  The best part is the keyboard is a little raised so you can easily text; the screen has great visibility, as well.

101_0046

Atlantic Cellular has so many programs that if you are interest you should stop by or give them a call.  They can taylor a program to fit your needs.

So many phones available; with so many applications.  Where do we go from here?

101_0032

I love my new phone.  I am still learning how to best use it.  Then I got a phone call from a friend asking me, after I had texted her from my Brigade, if I had now joined the technology enhanced community in the 21st century.  I had to laugh because coming from someone that cannot turn a computer on …. don’t worry she is a good friend and I can make this type of comment without offending her.  But I would like to tell her that my new Brigade is an all digital phone.  It has text messaging, picture messaging, video messaging, mobile web, VZ Navigator, Chaperone, Media Center and V CAST Music with Rhapsody among other things.  I just won’t use all of that.

Transferring contacts and 300+ pictures to my new phone.

Transferring contacts and 300+ pictures to my new phone.

So, I guess I am set…thanks Mark…talk to you later….you know I will….

Rehoboth Beach, Restaurants, Downtown, Specials, Off Season Specials, Delaware Beaches, What’s Going On?

100_0839

Rehoboth Beach is one of those coastal towns located in Delaware that is known for its good restaurants.  Even though I have lived here for many years, there are still some that I have not visited.

A year ago I started my blog and during this past year I have reviewed some of the downtown restaurants.  Once I have reviewed a restaurant or business I send them an e-mail.  My reviews are, of course, my personal opinion.  I think the restaurants appreciate comments; how the customer has been treated from the moment he or she steps into their establishment.

With that said, I am now getting e-mails with the fall offerings and specials.  The following list, is by no means complete.  I am getting there and I will keep passing on the information as I get it or find it.

Eggplant Parmesan, Recipe, Gluten Free, Easy

100_3294

This past week I had a craving for eggplant.  Don’t you feel at times that you are saturated with beef, chicken and fish?  I do, so I decided to make this recipe as healthy as I could.

Eggplant was baked, instead of fried, before assembling it in the baking dish, and the breadcrumbs were gluten free.  Gluten free breadcrumbs are found the “green isle” of your grocery store; if not, improvise with corn flakes, crushed rice crackers or gluten free flours.

Spaghetti Sauce is also found gluten free in either the “green isle” or in the other isle where the pastas are located.  Please read labels.

Eggplant Parmesan

100_5229

3 eggplants, peeled and thinly sliced

3 eggs, beaten

4 cups (or more) of “gluten free” breadcrumbs.  You can season them with basil, oregano, pepper and parsley.

6 cups (or more) spaghetti sauce.   Gluten free.

Fresh mozzarella cheese (2 balls), chopped.

1/2 cup freshly grated Parmesan cheese.  Please grate the Parmesan cheese since some of the ones already grated have preservatives or glutens.

1 1/2 teaspoons dried basil.

Pre-heat oven to 350 degrees.

Isn’t it a pain to have to peel the eggplant?  You should, though.  Dip the eggplant slices in egg, and then in the bread crumbs.

Place in a single layer on a cookie or baking sheet.  Bake for about 7 minutes or so on each side.  I had to use 2 baking sheets in order to fit the pieces.

In a 9 x 13 inch baking dish spread about 1 1/2 cups of the spaghetti sauce to cover the bottom.  Place a layer of eggplant slices in the sauce.

Sprinkle with half of the mozzarella and Parmessan cheeses.

Repeat with remaining ingredients, ending with the cheeses.  I made 2 layers.

Sprinkle basil and oregano on top.

Bake in a pre-heated oven for 45 minutes or until golden brown.

Note:  If you do not have a gluten allergy then just use Italian breadcrums.

100_5228

Add a green salad.  Already there is so much color in the meal.  Make it your own and enjoy!!

The 15th Annual Greyhounds Reach the Beach, Dewey Beach, Delaware, Columbus Week-End, Delaware Beaches

I had to take a drive to Dewey Beach; only about 1 1/2 miles from my house.  This week-end was the 15th Annual Greyhounds Reach the Beach.  Every year, at this time of the year, all you see are greyhounds all over the beaches.  Owners are not just satisfied with one; they usually have 2 or 3 or even more.

101_0013

101_0023

Anyway, this annual event is the largest gathering of retired racing greyhounds in the U.S.   It is not a Greyhound Rescue, Inc. event.  It is sponsored by the Greyhound Project, Inc., but because they are close, they always have huge numbers of their dogs attending.  For more info. on the Greyhound Rescue, Inc., please visit www.greyrescue.org/fun_stuff/reach_the_beach.shtml.

The Greyhound Project, Inc. is a volunteer, non-profit organization, located in Framington, MA, providing information about and promoting the adoption of retired racing greyhounds.

It was founded in 1992.  It promotes the welfare and adoption of greyhounds by providing support and information to adoption organizations, adoptees, and the public.  Please check them out by visiting www.adopt-a-greyhound.org.

Greyhounds are great family members.  They are calm, intelligent and low maintenance.  They will share your couch or your jogging with equal enthusiasm.

I rescued my dog, Addy, about a year and half ago.  All I can tell you is that she is so sweet and greateful for me giving her a forever home.  The rescue organization I used was Paws of Tomorrow, Ocean View, Delaware.  Website www.pawsoftomorrow.com.

The first greyhound I encountered in Dewey was Riley.  She was so at ease sitting by Grotto Pizza with her owner.  I had to take her picture.  She looked like a diva with those sunglasses.

Then I saw the other dog who was exhausted after walking up and down the town of Dewey checking out the vendors.  Another diva; relaxing.

On the way to the beach I encountered the people from Ohio that have North Coast Greyhound Connection.  Their motto?  Change a Life… Adopt a Retired Racer…You will Fall in Love…  Please check their website www.northcoastgreyhoundconnection.org.

The greyhounds in the picture were all privately owned.

Right on the beach some of the dogs were in the water or just by the water’s edge.

Then, others, were just relaxing with their owners.  I met the ladies that owned an Italian greyhound that, by the way, was a little chilly and the other greyhound that did not move even when I took his picture.  They were from Long Island.

Rehoboth Beach, Delaware, Events, Activities, 10/9/10 – 10/10/10, Delaware Beaches

I took a drive through Rehoboth Avenue.  It looked like summer.  Crowded, very crowded.  So many events and activities in all the beaches.

The fall is the perfect time to visit all the beach resorts.  It is our Second Season; festivals, benefits, fundraising events, runs, walks, you name it.

100_2322

Everything that make our beaches sizzle in the summer is at your fingertips; popcorn, candy, pizza, french fries, the beach and of course great restaurants.  You know, Rehoboth Beach; being such a small coastal town, but the restaurants are amazing, offering the best in local cuisine.
