Eggplant Parmesan, Recipe, Gluten Free, Easy

This past week I had a craving for eggplant.  Don’t you feel at times that you are saturated with beef, chicken and fish?  I do, so I decided to make this recipe as healthy as I could. 

Eggplant was baked, instead of fried, before assembling it in the baking dish, and the breadcrumbs were gluten free.  Gluten free breadcrumbs are found the “green isle” of your grocery store; if not, improvise with corn flakes, crushed rice crackers or gluten free flours.

Spaghetti Sauce is also found gluten free in either the “green isle” or in the other isle where the pastas are located.  Please read labels.

 

Eggplant Parmesan

3 eggplants, peeled and thinly sliced

3 eggs, beaten

4 cups (or more) of “gluten free” breadcrumbs.  You can season them with basil, oregano, pepper and parsley.

6 cups (or more) spaghetti sauce.   Gluten free.

Fresh mozzarella cheese (2 balls), chopped.

1/2 cup freshly grated Parmesan cheese.  Please grate the Parmesan cheese since some of the ones already grated have preservatives or glutens.

1 1/2 teaspoons dried basil.

 

Pre-heat oven to 350 degrees.

Isn’t it a pain to have to peel the eggplant?  You should, though.  Dip the eggplant slices in egg, and then in the bread crumbs.

Place in a single layer on a cookie or baking sheet.  Bake for about 7 minutes or so on each side.  I had to use 2 baking sheets in order to fit the pieces.

In a 9 x 13 inch baking dish spread about 1 1/2 cups of the spaghetti sauce to cover the bottom.  Place a layer of eggplant slices in the sauce.

Sprinkle with half of the mozzarella and Parmessan cheeses. 

Repeat with remaining ingredients, ending with the cheeses.  I made 2 layers.

Sprinkle basil and oregano on top.

Bake in a pre-heated oven for 45 minutes or until golden brown.

 

Note:  If you do not have a gluten allergy then just use Italian breadcrums.

Add a green salad.  Already there is so much color in the meal.  Make it your own and enjoy!!
