I was taking, Addy, my dog, for a walk early this morning.  It was humid.  So much more than yesterday and I started to wonder what would I want for dinner tonight.  I have not had anything for breakfast yet, and already dinner was on my mind. 

I think dinner is my favorite time of the evening.  Having it al fresco makes it even better.

The following 3 recipes would be perfect for a day like today.  They are easy too.

 

Flank Steak Wrap

 

1 beef flank steak – 1 to 1-1/2 lbs.

4 cups pre-cut coleslaw mix

1 cup chopped green onions

salt and pepper to taste

8 medium flour tortillas

1/2 cup honey roasted peanuts, coarsely chopped

 

Dressing:

1 cup rice vinegar

1 tablespoon honey

2 tablespoons sesame oil

 

For the dressing, just combine the rice vinegar, honey and sesame oil in a jar and shake vigorously.

Place beef steak and half of the dressing in a plastic bag.  Close bag securely and marinate in refrigerator for 1/2 hour. 

Pour other half of dressing in a large bowl and toss with coleslaw, green onions, salt and pepper.

Place steak on grill over medium coals and cook 17 to 21 minutes for medium rare to medium doneness.  Let it rest on a cutting board for a few minutes and sprinkle with salt (optional) and pepper.  Slice into thin strips on the diagonal.

Warm tortillas 10 to 15 seconds in the microwave.

 

To assemble:  Place beef slices, some coleslaw mix and peanuts on a tortilla and roll tortilla.  Garnish with green onions and peanuts.

Note:  Allergies?  To make it gluten free, then you will need to find corn tortillas and read the ingredients on the peanuts.  Peanuts are usually dusted with wheat.  Crazy, isn’t it?  Peanut allergy?  Then you know what you need to do.  But maybe you can give it a little “cha-cha” by adding chopped jalapenos instead of peanuts.

 

 

Raspberry-Lime Agua Fresca (Non-alcoholic)

 

If you like raspberries, then you will probably like this refreshing drink; definitely, better than soda.

 

3 cups or a 12 ounce bag of frozen raspberries

1/2 cup sugar (you may use sugar substitute, please adjust)

1/2 cup lime juice

ice cubes

fresh mint sprigs

lime wedges

 

Place raspberries, sugar and lime juice in a blender along with 2 cups of cold water.  Puree, and then pour the mixture into a large pitcher.

Sir in 6 cups of cold water.  Refrigerate for at least 1 hour and up to 2 hours.

Stir well before serving.  Pour the agua fresca over ice and garnish with mint sprigs and a lime wedge.

Note:  If you would like to spike it, then white rum or tequila would be the liquor to add.

 

 

White Sangria

 

There is nothing better than a good Sangria on a hot summer day.  I will admit that my favorite is the traditional red one but it also good to alternate and serve a white one on a warm day.

 

1 green apple, cored and cut into 1 inch chunks

5 strawberries, hulled and thinly sliced

1/2 cup canned pineapple chunks with 1/2 cup juice

2 limes, thinly sliced

one 750 ml. bottle of white wine

1/4 cup triple sec

1 cup orange juice (4 oranges)

1/2 cup lemonade

ice cubes

 

Combine all ingredients except the ice cubes in a large pitcher and chill for at least 2 hours or up to 2 days.  Serve the white sangria in glasses filled with ice, being sure to include a selection of the fruit in each glass.

Makes about 8 cups.  Can easily be doubled.

One of my friends was complaining about me wanting to go to Rehoboth for dinner on Friday night.  Are you crazy, we are never going to find parking and on and on he went. 

Oh, he said, I cannot believe you went into Rehoboth this way, you know under the bridge, etc. etc.  Well, I never go this way, he continued, hmm, it seems easier, he kept on talking.  Oh my gosh, look at the traffic on Rehoboth Ave.  I knew it.  Good luck finding parking.  I just told him to stop complaining.  I was even driving him.  The other 2 in the car were quiet.

Our target restaurant was the new Cafe Azafran that had just opened on 18 Baltimore Ave.  The original restaurant is in Lewes on109 Market St. and this new location was going to be following the same cuisine.  The tel. is 302-227-8100.   Website is www.cafeazafran.com.

The person that was complaining got a little happier when he saw the parking lot across from Cafe Azafran.  Not bad, afterall.  He treated for the parking and dinner. But, that’s the kind of friend he is.

Cafe Azafran is known for its authentic Mediterranean Cuisine.  They also have Tapas for sharing, entrees, desserts and a full bar.

The restaurant is not just opened for dinner; it is also opened daily from 7 a.m. until 11 a.m. offering breakfast, along with a very extensive Cafe Drink Menu.

Scones, croissants, yogurt loaf, baked oatmeal with milk or yogurt, Azafran Breakfast Sandwich, Frittata with Roll and bagels with toppings are among their morning offerings.

I was so surprise to the Dawn there.  She was going to be taking care of us.  She is the best.

We were hungry so immediately we started with:

Bistro Salad – This salad has French goat cheese, crisp jamon, baby romaine, croutons, tomato, with a sun-dried tomato vinaigrette.  I really enjoyed it.

The special salad had beautiful tomatoes and also French goat cheese. Also very well received.

And, the Fresh Mozzarella and Roasted Peppers and Olives Salad was also very well liked.

For entrees we had:

Seafood Tarragona which was a bouillabaisse of shrimp, scallops, mussels, calamares, fish, hazelnut and almond Romesco in a saffron shellfish broth.  I love soups and this was perfectly seasoned and just the right amount.

Rave reviews from the person that got the Flat Iron Steak.  He said it was the best he had had.  It had roasted mushrooms, fresh garlic-chive mashed potatoes, bleu cheese butter, and a fresh vegetable demiglace.

The friend that got the Azafran Jumbo Lump Crab Cake also thought her dish was delicious.  Cafe Azafran is known for its crab cakes so I was not surprised. It had Catalan spinach, white beans, polenta and an avocado aioli.

The halibut entree was another success.  It was accompanied by ratatouille.

We actually did not try any of the desserts but I know that they do have Tiramisu, Lemon Ricotta Napoleon and Crema Catalana which is a Spanish creme brulee, among others.

Anyway, as usual I have to mention that having dinner with friends, good friends, by the way, is the best.  Really, it’s true, and you know it.

And that parking space?  Right on the ocean block of trendy Baltimore Street, $15 until 2 a.m.

Liquid Assets, Ocean City, Maryland, Bistro, Bar, Restaurant, Review, Liquor Store?, Restaurant?

One of my favorite pastimes, in case you have not realized that yet, is eating.  Not just eating, but trying new foods and restaurants that are innovative and creative.  Who wants to eat the same old boring food day in and day out?  Whether I am at the Delaware Beaches, Delray Beach, Florida, Puerto Rico, Boulder, Colorado, Baltimore, Maryland and in between I am looking for a little adventure in eating.

Yesterday, Cindi and I decided that lunch could be a nice time to catch up on what has been going on in our lives.  Better to do that while eating. 

Liquid Assets has my favorite mussels.  I had a craving for them.  You have seen me try mussels lately everywhere I go.  Well, Liquid Assets mussels are the best, in my book.  I think second place would be a little Italian place in Georgetown.  But, every time I get to try them in other places my thoughts go back to the ones at Liquid Assets; just delicious!!  No comparison.

I just saw a new Vodka called Bakon Vodka.  It is a potato vodka, which is the vodka you would need to drink if you are on a gluten free diet.  Apparently, it is smooth, and slightly sweet.  No strong burn or aftertaste.  It has a savory bacon flavor with a clean crisp finish.  Interesting.

As I entered Liquid Assets again, I had to ask myself; if I did not know any better would I think I am at a liquor store or a restaurant?  The place is unique, no doubt about it.  I have not seen one like this at the Delaware Beaches.

The first room definitely gives you the aura of the liquor store but immediately you get to notice the big bar and tables around it; sofas amidst barrels and wine bottles.

There is another dining room that will transport you to a wine cellar, maybe in your own home or in another country. This dining room is probably more conducive to quiet conversation. It has its own bar, as well.

Cindi and I got comfortable and our waitress proceeded to let us know what specials were on the menu that day.

We decided on a bruschetta for the table that was made out of peaches.  Loved it.  Had a good kick to it.

Cindi had the orzo salad with kalamata olives and chilled canteloupe soup.  I had a taste of the soup and it was very refreshing. It was definitely good.

Of course, I had the mussels and they were as good as ever.  I loved the pieces of chorizo, the broth and, of course, the bread.

A coffee to finish our meal and before we knew it, it was time to say “adios”.  Until next time.

Seacrets, Ocean City, Maryland, Restaurant, Review, Assawoman Bay, Assateague, A Day on The Bay

 

An invitation to spend the afternoon on the bay is something that is always appreciated.  You forget how beautiful the Delmarva Peninsula truly is.

On that water, on that gorgeous day, Shelley, Michael, Erica and I took off to enjoy what this area is known for; nature, marshes, birds, fishing, Assateague Island, the ponies, and of course, the restaurants and bars on the bay.

The bay that we were navigating is called Assawoman Bay and it is really defined as a lagoon that is found between Ocean City, Maryland and mainland Delaware.  It is huge, gorgeous and the playground for everyone that enjoys water sports.

We decided to make it all the way past Ocean City and see if we could see some of the famous ponies on Assateague Island.  It takes a while to get there but nobody minded.

Our Captain, Shelley, was doing very well.  We have had some crazy trips in the past so Michael and Erica were not sure how this one was going to turn out.  But, they were surprised and pleased.

Assateague Island has about 37 miles of beach.  It is a barrier island off the coast of Maryland (Ocean City) and Virginia.  Already the day trippers were there.

I was not sure if were going to be able to spot the ponies; finally, at a distance, we did.  They were so beautiful.  Assateague Island National Seashore has about 300 ponies in Maryland and Virginia.

Those ponies we saw were really enjoying the solitude the island has to offer.  The ponies have been there for about 300 years.  The earlier ones had solid coloring; a good number now have brown and white patches due to interbreeding with new ponies in the last 100 years.  For more information, please visit www.assateagueisland.com/wildlife/pony.htm.

We did have a target on your sights; that being Seacrets.  If you have been coming to Ocean City, I am sure that, at some point, you have visited this entertainment complex.

I remember when it first opened up so many years ago.  Then the expansions started and today the place has over 25 plus bars and restaurants.  Music and entertainment are their specialty.

We were coming by boat.  You have the choice to dock your boat or anchor out and the Tipsy Water Taxi could pick you up.  That’s exactly what we did.  The Tipsy Water Taxi works until very late in the evening.  It was so easy and they were great.

The beach bar is well, the place to be.  Tables inside the water and drinks brought to your table or to the floaters.

The idea is to feel like you are on an island.  They have Jamaica on their minds but it really could be any island on the Caribbean.

On Sunday, it was crowded by anyone’s standards but after the big holiday week-end, it was more toned down.

I was surprised that our food was very good.  Seacrets is so big that I wondered how they could handle such big crowds.

The Jerk Chicken, was delicious.  That was a starter but I could have put those pieces of chicken on top of one of the salads, as well.  The Mediterranean Bruschetta was very tasty and the pita bread was warm.  Greek Salads for all of us but I had skirt steak on mine and the steak was cooked to perfection.

We  went to talk to the “Hat Mon”.  He has been with Seacrets since 1991.  His specialty? The art of palm weaving.  In the summer he is here, at Seacrets, and in the winter he is in Florida, at Capt. Hiram’s Restaurant & Marina and Key West Inn at 1601 Indian River Drive, Sebastian, FL 32958.

Hat Mon weaves hats, bowls/baskets, purses, marlins, sharks, you name it.  Another location where you might find him is at the Green Turtle Club in Abaco, Bahamas, www.greenturtleclub.com.

One of the drinks ordered; the house specialty, was Pain In De Ass.  This drink has multiple layers of frozen Rum Runner, which is blackberry and banana liqueurs with a kick of gold rum, and Pina Colada.  It was well received.

It was time to listen to some music and I have to admit it; once you are there, it is contagious and when that music started you could not help but move your feet to that rythm and feel the sand between your toes.

Seacrets is patroled by the Peace Police.  They make sure that while you are in their property you behave and look decent.  No hats backwards while you are walking through the restaurants and bars.  Only at the beach bar you can then turn the brim towards the back.

In the bathrooms, at least in the ladies room, once the door is closed, you will see signs asking you “Where is your drink?”  And, what to do if you have left your drink at the table.  With everything happening in our societies they are giving you the warning that you should never leave your drink unattended.

I thought Seacrets was a lot of fun on Sunday.  I was impressed on how well organized everything was.  The only thing I would suggest is to have someone attend to the bathrooms.  Some needed care.

We left Seacrets after 7:00 p.m. and the ride back home was amazing.  Gliding through the water was so peaceful; we were happy and as I looked at our faces, I notice that we were smiling.

Who would make an appointmet in Baltimore, Maryland the day after  Memorial week-end?  Well, I did.  That was really crazy because just in Ocean City, Maryland, right here at the beaches, there were 250,000 visitors that decided to spend the week-end with us.  I don’t know how many in the Delaware beaches but plenty were here, as well.

Needless to say, they have to go home so on Tuesday we all drove West in caravan style.

At one point we are at a dead stop on Rt. 404.  Many of you know which route this is.  A suggestion was made in my car to take a “short cut”.  Yeap, the short cut took us 10 miles back on a winding road that was sort of familiar but really wasn’t.

It did not matter to much to me and I just laughed and hoped that other suggestions would not be made.

My thoughts were really on where I would, definitely, be stopping on my way back.  Harris Crab House is a must for me when I find myself traveling these roads.  The restaurant is located right there in Kent Island and I have talked about it in the past.  And once again I am talking about it because you never know how the food or service is going to be.  The location is perfect for a crab house.  Right on the water, watching the boats go by.

It was late in the afternoon but not dinner time so the idea was to have just an appetizer.  Well, I have to confess that I love steamed clams, especially, cherrystones.

Of the small clams there are “littlenecks” that are from Littleneck Bay, Long Island, N.Y. and are better eaten raw or in chowders, and the “cherrystones” which are slightly larger in size and named for Cherrystone Creek, Virginia.  These could be eaten raw or cooked, but I love them best steamed, as mentioned above.

I really was a pig; I ate 60 clams.  Yeap, I did.  I am not guilty beacuse they were so good; sweet and salty and the perfect size.  Then I just had 3 crabs; a balancing act.

The crabs were not as good as they usually are.  The man at the next table who had eaten plenty of crabs in his life thought they were paper thin.  And, they were, even though they were tasty.  The waiter said that they were hit hard during the week-end. The size of the crabs were large but not that large, really.  They were out of the jumbos, and the prices were high.

This man mentioned that his favorite crab house in Ocean City, Maryland is The Crab Bag.  Probably so, but I will have to check it out since I have not been there this season.  Will let you know.

By the way, I had lunch in Baltimore, Maryland yesterday at a restaurant called Tark’s Grill.  I did not take pictures but it is worth mentioning in case you are in the area of Greenspring Station, Lutherville.  It was delicious with an extensive wine list and menu.  There is outdoor seating available and my signature salad, Lindsays Chicago Chopped Salad with Blackened Chicken was great.  It  had chopped pickles, almost unnoticeable, but it really added to the salad.

Que Pasa?, Mexican Cantina, Dewey Beach, Delaware Beaches, John Eddie, Entertainer, Musician

Well, this week, certainly, I have had a diversed group of posts.  From Fager’s in Ocean City, Maryland, Tulip Festival in Lewes, Life Saving Station, Shredder Truck, yesterday, Friday, 4/23, the preview of Avery’s Rest (archaeological dig), and ending in Dewey Beach at Que Pasa? with entertainment at Lighthouse with John Eddie.  Afterall, my blog, is AboutMyBeaches, so experiencing what these resorts have to offer is part of my job. Please, don’t laugh.  I am serious, it’s true.

I arrived at Que Pasa? at dusk.  This Mexican Cantina is located on 124 Dickinson St. in Dewey Beach.  Tel. 302-226-1820.  I wrote about this restaurant on 9/2/09.  Just go and click on the month of September and scroll down to the date.  It is an open Bar on the water, facing Rehoboth Bay.  The view could not be better.  You are able to eat at the Cantina, outdoors or you can go to their own restaurant inside.  On a beautiful evening like last night people had started happy hour early and it was crowded.

Happy Hour is not just one happy hour anymore, it is all day.  In Dewey Beach, that’s the way of life.  It is a true beach town; water, water sports, restaurants and music.

And that’s how my evening started.

A friend mentioned to me, last summer, that I needed to go to Dewey and listen to John Eddie.  For one reason or another I never did.  Again, she mentioned that he was playing for the first time, this season, at Lighthouse on Friday.  She is a true fan of his.

As I mentioned, Que Pasa? was full and we had drinks there and said hello to locals and residents alike.  Then, we ate inside because it does get chilly in the evening, at this time of the year. 

A few of us ordered the seared tuna.  It was so delicious, perfect portion and cooked just the way it should be, very pink in the middle.  It was accompanied with sauteed potatoes, a slaw and a chipotle sauce.  Other orders were steak quesadillas, shrimp quesadillas, crabcake sandwich.  Everyone was happy.

We were enjoying every moment but we really were waiting for the time to arrive in order to see John Eddie.

Finally, we decided to walk around the restaurant to Lighthouse.  Que Pasa? and Lighthouse are part of the Ruddertowne Complex of entertainment venues and restaurants located in Dewey.

I was told that even though John Eddie was supposed to start at 9 p.m., he is never on time.  On Friday, the fans were getting restless since it was almost 10 p.m. and they were still setting up.  You could see everything going on because Lighthouse is not that big and it was full to capacity.

I did not know what to expect of him.  He had a boyish look and a resemblance to Bruce Springstein in the way he moves and performs.  By the way, Bruce is a fan of his.

His music genre?  A little bit of country and a lot of rock and roll. Then add some soul and folk music; that’s John Eddie.  His website is www.johneddie.com.

As a songwriter you find that his songs are very personal but some are definitely, foot stumping.

The moment, I kid you not, he started performing there was not one single person that was not dancing.  That lasted about 3 hours.  He engaged his audience and you were right there with him.  Yo Faithful! Raise Your Bottles, Raise Your Glasses and everyone did, many times.

His renditions of Rod Stewart’s 1971 Maggie Mae and Elvis’ 1969 Suspicious Minds were phenomenal.  He plays them in every show.  Fans expect him to.

His followers travel to see him perform.  Today he is at Harrah’s Resort in Atlantic City, then to Kennet Square, PA and then to San Diego, CA.  But, this summer, starting on May 27th, he will pretty much be every Thursday, at the Cove, also located at Ruddertowne in Dewey. 

So, if you like to dance and listen to good music, put on your dancing shoes and you now know where to go.

An Appointment at…The Office…Delray’s Newest…Florida…Restaurant…Review…

Friday, in Delray Beach, lunch was on my mind and my target was the newly opened The Office.  Yes, they just opened a week ago.  Right on Atlantic Ave. and close to its sister restaurant, Vic & Angelos, which I reviewed on September 29th.  You can read that review by clicking on the month of September on the left hand side of this blog and scroll down.

The Office is a Gastropub.  But what is this concept?  A Gastropub’s main concern is quality food.  It is a combination of pub and gastronomy.  Gastronomy being the study of the relationship between culture and food.  Sometimes the concept of a restaurant in a pub brings criticism because it removes the character of traditional pubs, which are mainly drinking establishments. 

That been said, I want to tell you that today was a truly beautiful day.  It has been so chilly in South Florida that everyone was eating outside, walking and just enjoying the warm breeze.

All the restaurants on the Avenue were crowded.  Aren’t we supposed to be in a recession?  Really, I could not get over it.

I think you would like The Office.  It is a very open restaurant and it does have a library kind of feel when you come in.  Wood panels and books are part of the decor.  Interesting were the postal boxes; I am not sure if they were for decoration or if they kept the silverware in them.  A large bar is one of the main attractions.  You can access the bar from the sidewalk, as well.  Well thought out.

There is outdoor seating, but the only available table was inside.  Tables were near one another, but I did not mind that.

Craig was our waiter and he was very good.  Ask for him if you visit the restaurant.  He was prompt, friendly and anticipated what we wanted.

The silverware was inside a business envelope.  The menu was presented in a very large manila envelope.  On the front, the list of everything you can eat was posted.  The rest; alcoholic beverages.100_0125

I have to mention that they do have one of Delaware’s own Dog Fish Head; 60 Minute, IPA and the other beer that caught my attention was from Frederick, Maryland; Flying Dog Old Scratch.

The menu is divided as follows:

Office Supplies are the starters.  Go Green are salads.  Al Desco are burgers (a specialty of the house), Outlook are specials of the week, the Bottom Line are the entrees and Action Items are the Sides.  For each type of alcoholic beverage you will also find a catchy name.

The menu also mentions that there will be no substitutions, no cry babies and no kidding.  It also mentions to alert the serving staff of any food allergies.  Well, of course, we did and Craig was so nice to go to the kitchen and ask the Chef if what my husband wanted to order had gluten.  He wanted the Truffled Organic Deviled Eggs.  No gluten on those and they were so delicious.  I think next time I might have them with the Horiatiki Salad I had.  This salad had heirloom tomato, cucumber, red pepper, red onion, taggiata olives, goat’s milk feta cheese and red wine vinaigrette.  I think they would pair perfectly.

For lunch I had the Prime Office Cheese Burger.  It was a very generous size burger with butter lettuce, tomato, red onions, pickles, The Office Sauce and aged cheddar.  Perfectly cooked and nicely presented.  I thought it was a little salty, though.  It came with the thinnest shoestring fries; very crispy, just like they should be.  My son had the CEO Burger and it was named appropriately so; sweet onion, tomato confit, gorgonzola, gruyere, arugula and bacon.  Is your mouth watering yet?

Glancing around the restaurant, you could watch a diverse group of people.  I wondered about their stories.  Are they here on vacation? Or, are they locals or natives?  Is Delray Beach everything they expected this Village by the Sea to be?

The Office runs like clockwork; the owners seasoned restauranteurs, having many restaurants around the country.  So, check out their website because you will find the menus and other interesting information.

And once again, just like James Beard has stated “Food is our common ground, a universal experience.”  Indeed it is.

Nantuckets Restaurant…Fenwick Island…Delaware Beaches…Restaurant…Review…Seafood is their specialty…

In the past I have told you that all the beach towns, from Lewes to Ocean City, Maryland, are within driving distance from each other.  Fenwick Island is a half way point for some of us that get together for dinner from time to time.  Fenwick Island is right on the Maryland/Delaware line.

One popular restaurant in this beach town is Nantuckets Restaurant.  This restaurant has two seating options.  You can choose to sit in their more formal rooms or you can choose the Tap Room.  The Tap Room is the one I am going to be reviewing because I like it the best.

I have to be honest with you, but I really don’t think that often about this restaurant.  I have had both good and o.k. meals in the past years.  You might have a different opinion, but I have gone enough times that I can certainly say it.  Remember, this review is my opinion only.

It is in their Tap Room where I have had the best meals.  I think that particular side of the restaurant is cozy, great for lite fare, even though you can get full entrees. And don’t worry because if you are a sport aficionado there are t.v.s to keep up with the scores.  Definitely a room with atmosphere.

Right before Christmas we met Ross and Cindi.  It is becoming our annual Holiday dinner before it gets hectic.  We have been getting the same table in the corner of the room.  Full view of who is coming or going.

We did not know they had a great special that day.  I believe it was around $19 for a lot of their entrees.  I was originally going to get their steak salad, which is, by the way, the best.  Instead, I got the strip steak which was delicious.  Cindi got the crab cakes, which Nantuckets is known for and Ross got chicken, which he raved about.  My husband, on the other hand, decided to order the soft shell crabs.  I would not have ordered them, because they are frozen this time of the year.  He said they were o.k.  We really did have a nice evening, and plenty of laughs, which are the nicest things about sharing meals with friends.

Nantuckets has on-line shopping. Visit their website if you would like to order some of their specialties like the Quahog Chowdah, Lobster Mac N’ Cheese, Crab Cakes, Eastern Shore Crab Meat, and Maple Balsamic Vinaigrette.

Chowdah?, Chowdeur? or Chowder?  Anyway you say it will be fine and Nantuckets has a good one. Thick and rich.

Another dish to try is their lobster claws.  It is big enough for an entree. Tasty and sweet.

Since 2009 is coming to an end, Nantuckets offers New Year’s Eve fare.  And, if you go by 5:45 p.m. you will get $5.00 off.

 

About 10 years ago, I got the following recipe from Nantuckets:

 

Lobster and Scallops Dijon

 

2 (1-1/2 lb.) lobsters

1 lb. bay scallops

4 tblsps. butter (or margarine)  I like butter the best for this dish.

3 tblsps. chopped green onions

1/4 tsp. thyme

1/2 cup cream sherry

1 cup cream

4 tblsps. Dijon mustard

 

Cook lobsters in boiling water for 10 minutes; remove and let cool.  Remove lobster claws, crack and clean out meat; reserve.  Split lobsters from head to tail; remove meat and all the “goodies”; add to reserved claw meat.  Slice lobster and save.

Note:  To save time have your store steam the lobsters.

Saute onions with thyme in 2 tblsps. of butter.  Add sherry and reduce liquid by 1/2.  Add cream and mustard; bring to a boil.  Boil 1 minute; remove from heat and keep warm.

Pat dry scallops and sautee them in remaining 2 tblsps. of butter for 4 minutes.  Add lobster meat and cream sauce; mix well.  Cook 3 minutes.

Serve immediately over wild rice.

Serves 4.
