You will find Rainbow Earth Foods at the Delaware Beaches…In the town of Rehoboth Beach…

Rehoboth Beach

Rehoboth Beach

It has been a year since my husband started eating gluten/wheat free.  It has made such a difference.  When they tell you that the only thing you can do when diagnosed with celiac disease is diet, then you plunge into a new way of eating.

I thought it was going to be hard but, actually, once I cleaned my kitchen and my pantry; turned it into a “gluten free kitchen” it was not bad at all.  You get used to it; you have to.

There is so much more awareness in this country about gluten allergies and intolerances.  People have so many choices.  Grocery stores have isles with plenty of gluten free products.  Product labels have to disclose glutens.  Restaurants are offering gluten free menus, and the list goes on.  I have tried different products and some I like better than others.

The grocery stores in Rehoboth Beach have a lot of products available.  But, one of my favorite stores is Rainbow Earth Foods.  It is located right on the Avenue specifically at 220 Rehoboth Ave., Tel. 302-227-3177 , fax #302-227-7215, website is www.RainbowEFoods.com, and e-mail address is RainbowEFoods@aol.com.

I love this store.  It is not big but they have everything I need.  And, if you cannot find it, either Mike or Diana will order it.

For many years it was known as Peter Rabbit but Mike has had it for 7 years.

When you come into the store you will find on either side of the store refrigerators with natural juices, milk, and grab and go prepared foods like dips and cheeses.

There is one section with pure spices that are sold by weight.  They smell so good.

The store also carries soaps, beauty products, shampoos, toothpaste; all natural with no additives.

How about essential and botanical oils?  I did not know there was a difference.  Essential oils are single oils like lavender.  The botanical oils are a mixture of teas and spices.

They even have greeting cards that are “tree free” meaning they are made of earth friendly materials.

If you are using herbal and vitamin supplements, well stop by the store.  They have way too many for me to list on this post.

Since the holidays are soon approaching, they will have gluten free – Eberly’s organic turkeys.   They also carry 100% organic fed beef, free range young chicken breasts, and organic uncured bacon by Applegate Farms; no nitrites added.

My favorite products there are the following items and I really buy them all the time:

Organic Buckwheat flour – gluten free- for pancakes (delicious with molasses on top)

Organic Gluten Free pancake and baking mix

Namaste Foods Products like, Spice Cake, and cookie mix

European – gluten free crispbread and crackers

All products from the Grainless Baker, Inc. like muffins, cinnamon buns, pizza and bread.  These products are frozen and use as needed.  The pizza is amazing.  It is small but is the closest to the real thing.  I add chopped onion, sundried tomatoes, peppers, anchovies and Voila!! Include a salad and you have a meal.  Truly love those products.

Nustevia – sugar substitute.  I first saw it in Colorado. No bitter taste, safe for diabetics and naturally processed.

I buy their gluten free vanilla.  Yes, you have to be careful about vanilla too.

Soy sauce?  Yes, I buy the Tamari, wheat free.  I just saw one that also has low sodium.  I might have to have Mike order that one for me soon.

One thing I have to tell you is that one day I was at their counter paying and I noticed some bottles on the left hand side.  It was called The Natural Miracle Conditioner by Tate’s.  There are so many uses for this lotion.  It is for hair conditioning, skin, bath and shower, make-up remover, poison ivy, diaper rash and the list keeps going on and on. I bought it and it is true; it does all those things.  I really like it.  No animal testing, colors or dyes, fragrances or pesticides.  And, gluten free.  The company is from Ohio and their website is www.ourtatefamily.com.  Check it out.

Since starting this blog, I have learned so many interesting things….

At the Delaware Beaches….In Bethany Beach, Delaware….the Addy Sea, Inn/Bed and Breakfast…has endured the test of time…

100_1787

If you have been looking at places to stay, in any specific beach resort area of the United States, the list of amenities; how they can keep you busy for hours and hours, is endless.  I thought the idea was that you come to the beach to relax and read; away from the hustle and bustle.  What I would want to do is swim in peace, take a long walk or run on a wide beach only with the surf 100_1784sound in my ears.  And, going to restaurants or dancing, could be an option, as well.

You will find this type of relaxation at The Addy Sea, 99 Ocean View Parkway in the family resort of Bethany Beach.  The telephones are: 800-418-6764, 302-539-3707.  The website is www.addysea.com. The e-mail address is AddySeaBB@aol.com.

As I mentioned in other posts, I lived in Bethany Beach for many years and this historic Inn is well known throughout the Delaware Beaches.  I went to visit the Addy Sea just to see how it looked.  It is a cedar shingle house, ocean front, built by John M. Addy for his family in 1902.  Through the years it has been moved back twice from the beach (door frames in the house are not even) to help the house weather the North Eastern storms that hit the coastal areas from time to time.  For many years it has been owned by the Gravattes.  The Innkeeper is Leroy T. Gravatte, III but he was not there when I stopped by.

Instead, the Manager on Duty was Stacy Sinkinson and she was very gracious in telling me a bit about the house.  She also showed me one of the rooms available on the first floor.  The house is Victorian and they have kept everything intact to reflect that period in time.  Tea had been served already that afternoon and guest are also given a gourmet breakfast in the morning; included in the price of their stay.

The Addy Sea hosts about 15  weddings per year.  At the time of the wedding the Inn is only open to the wedding party and their guests.  I want you to know that this Inn/Bed and Breakfast welcomes adult guests only.

Not only do they host that many weddings but they are available for special events and family reunions.  There are 13 rooms to accommodate guests.

The Addy Sea is open year round and with so many events in the coastal areas of Delaware and Maryland, it would be such a treat to stay here.  The balcony, on the first floor that faces the ocean is so relaxing and with rocking chairs; believe me, you won’t want to move.

An interesting note, known pretty much by all of us that live near the Addy Sea.  It is one of Delaware’s haunted hotels.  Apparently, in Room 1, sometimes the copper tub shakes or vibrates.  In Room 6, organ music has been heard, and in Room 11, on the 3rd floor, the ghost of Paul Dulaney, who worked for the Addy’s roams.  Another ghost runs through the hallways at night as smells of perfume and mysterious music fill the place.  It has also been mentioned that footsteps belonging to Kurty Addy can be heard on the roof where he fell off and died.  This information was taken from www.thingsthatgoboo.com/hauntedplaces/haunteddelaware.htm.

I really don’t know if that is all true or not.  I have not met a single person that has seen a ghost there.  Of the years I lived in Bethany I heard those stories, just as I heard that recently, prior to 2 weddings taking place, the sprinkler system came on in the front lawn and nobody ha turned it on.  Also that a guest went to take a shower and as she slid the shower curtain, the water was already one.  I think that is good service!!!  And, that an employee heard the sound of the vacuum cleaner upstairs, but the vacuum was in the closet.  Who knows?  But it is perfect for this time of the year.

Do you really blame the ghosts if they chose to stay in the house?  It is oceanfront, after all.  Why in the world would they want to move inland?  Don’t you think?100_1779

At the Delaware Beaches?…In Ocean City, Maryland?…In Delray Beach, Florida?…These Recipes will be a hit on football week-ends…

Spinach Balls  (Thanks to Louise)

2 10 ounce packages chopped spinach, thawed and squeezed dry

2 cups herb stuffing mix

1 cup firmly packed freshly grated Parmesan cheese (5 oz. wedge)

1/2 cup butter, melted

4 small green onions, finely chopped

3 eggs

dash of nutmeg

mustard sauce – see below

Combine all ingredients, except sauce, in a large bowl and mix well.  Shape into 1″ balls.  Cover, refrigerate or freeze until ready to bake.

Preheat oven to 350 degrees.  Set balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes.  Serve with the following mustard sauce.

Mustard Sauce

1/2 cup dry mustard

1/2 cup white vinegar

1/4 cup sugar

1 egg yolk

Combine mustard and vinegar in a small bowl.  Cover and let stand 4 hours at room temperature.

Note:  I would make the sauce ahead of time and then proceed to make the spinach balls if you are planning on serving them on the same day.

Chicken Tortilla Soup  (Thanks to Cindi)

2 14.5 cans diced tomatoes

2 cups chicken broth (I use the low sodium for dietary reasons)

1 1/2 diced cooked chicken

2 tsp. chili powder

1 box of Zatarain Red Beans and Rice (prepared-takes 30 minutes)

Monterey Jack cheese,  chopped jalapenos and tortilla chips for garnish

Combine the cans of diced tomatoes with the chicken broth in a large saucepan and boil.

Sprinkle the diced cooked chicken with the chili powder and mix well.  Add into saucepan, along with the prepared rice mix.  Heat through.

Scoop into bowls and top with the garnishes.

Note: I like foods with a little heat. For the garnish, put in the tortillas first, then the shredded cheese and then the jalapenos.  Or,  put the garnishes on the side and everyone can just add their own.  This recipe can be doubled  easily for a big crowd.  All you need to add is a colorful salad.  Very easy!!

Can you believe that I did not have any Key Lime Pie in Florida?  Well, with the above soup, you can have a sweet ending with the following recipe.

Key Lime Pie

Crust:

1 package Keebler, cinnamon graham crackers

3/4 stick butter, melted

Preheat oven to 325 degrees.  Crush graham crackers.  Combine with melted butter.  Press into a 9 inch pie pan.  Bake 5 minutes to set.  Cool.

Filling:

5 egg yolks

2 cans Eagle Brand sweetened condensed milk

2/3 cups Key lime juice

Beat egg yolks.  Combine with condensed milk.  Add lime juice.  Beat all ingredients together.  Pour into the 9 inch pan.  Bake at 325 degrees for 15 minutes.  Cool.  It will serve 8.

Note:  To serve you can use Cool Whip.  They have it even sugar free.  Or, you can make your own, which is  best.  Just use whipping cream (I use Lewes cream in Delaware) and whip it until peaks form. You may grate some of the lime in it while whipping and even add a little sugar, but you won’t need it.

Regarding the key lime juice.  The best is the fresh one; no question. Usually at the grocery store you can get a bag filled with the small key lines.  I would imagine that in Florida, you might even have a tree. If you don’t have anything fresh, then use the juice in a bottle.

I hope you like these recipes.  See you later.

At the Delaware Beaches….An Old Standby is The Back Porch Cafe….in Rehoboth Beach, Delaware

At their location on 59 Rehoboth Ave., in the heart of Rehoboth Beach, this old standby is about to put away their 35th season.  It is the type of restaurant that has a loyal clientele that keeps coming back year after year.  It has those 5 requirements that make a restaurant successful.  The quality of the ingredients, the culinary competence, the service, the ambiance and price.

The first thing you notice is the ambiance and how could you not?  The Back Porch is located in a turn of the century house; a romantic atmosphere at its best.

Their food is excellent and unique.  I went there 2 weeks ago with my husband and a friend.  I had for an appetizer the Chorizo stuffed calamari, cranberry bean and green tomato ragout, pepita gremolata.  Then for my main course I had the Prosciutto wrapped loin of rabbit, confit leg, sweet potato gnocchi, almonds and porcini.  Out of this world!!  The meat was so tender and very well seasoned.

Our friend had the local salad and for dinner he had the grilled wild king salmon, summer squash chowder, zucchini dill croquette.  He seemed to really enjoy it.

My husband had the carpaccio of foi gras and magret duck breast, shitake, shaved parmesan and truffled mini mesclun.  He thought it was very good.  For his dinner he had a pan seared Atlantic halibut, sweet potato mole, local corn, avocado and roasted poblano.  Excellent, as well.

His dinner came from a gluten free menu.  Yes, the waiter told us that with so many people with gluten allergies or intolerances it was easier for them to pull out of their regular menu the items that were gluten free.

The Back Porch is open on week-ends in this time of the year.  Dinner hours start at 6:00 p.m.  Lunch and Sunday Brunch from 11 a.m. until 3 p.m.  Reservations are recommended so please call 302-227-3674 or e-mail them to info@backporchcafe.com.

If you visit their website www.backporchcafe.com you will find a great treat.  They have some of their recipes posted for you to try.  At the present time they are: Cafe Flambe, Marilyn’s Bean Salad, Golden Tomato Gazpacho, Peach & Blueberry Bread Pudding, Scones, the South Western Beef Salad, Timbales of Crab Custard and Spinach Mousse with Sweet Yellow Pepper Puree and the Back Porch Vinaigrette.  When you are in the website check the dining rooms so that you can see the pictures.  They are great.

As usual, a good dinner accompanied with a great friend and my husband, is always enjoyable.  See you soon….

Note:  In the height of the season, the parking in Rehoboth Beach can get tricky because you have meter parking on the main and side streets and the town is crowded.  If you are not within walking distance, your best bet is to call Seaport Taxi Service.  They are available 24 hours and the tel. in Rehoboth is 302-226-2232 and in Lewes is 302-645-6800.
