The tomatoes are at the height of the season, the peaches are still sweet….this is pretty much a raw salad. Bursting with flavor, it has everything to offer for a perfect end of the summer 2014 meal.
When I made this salad I used gluten free bread. The recipe, actually calls for white bread with crusts removed. Your choice.
TOMATO, PEACH, CORN, AND FETA SALAD
2 slices white bread, crusts removed, cut or torn into small pieces
1/2 cup plus 6 tablespoons extra virgin olive oil
Salt, to taste
2 ears fresh corn, shucked
4 ripe tomatoes, a variety of colors….or plain red will do. About 2 lbs.
4 large peaches (about 2 lbs. too)
1/2 cup thinly sliced red onion or shallots (I used red onion.)
3/4 cups of sheep’s milk feta, crumbled
Pulse the bread in a blender or food processor until the bread breaks down into coarse crumbs.
In a medium skillet, over medium heat, warm 1/2 cup of oil. Once warm, add breadcrumbs and gently toast until golden and crispy. Transfer crumbs to a plate line with paper towels. Season with salt.
Using a sharp knife, slice corn kernels off the cob.
Cut tomatoes and peaches, preferably into wedges. Place in large bowl with onion slivers and corn kernels. Season with salt, optional.
Add the Feta cheese.
Add 6 tablespoons of oil and toss to combine. And then, sprinkle your favorite white balsamic vinegar. My choice was Cranberry Pear White Balsamic from the new store in Downtown Rehoboth Beach….The Olive Orchard.
Distribute salad among plates, then scatter breadcrumbs on top…..serve and enjoy!!

My husband, John Merryman, III’s testimony before passing away last August 31st was that during over the 3 decades in Bethany Beach, Delaware, he had developed more than enough houses to know the business. He referred to Jeff Burton of Lane Builders as a consummate professional, easy to deal with and someone he was happy to be doing business with.
John and Jeff designed The Tidewater, a home that was to be built on Parkwood Street in Bethany Beach. The lots in Bethany are usually long and narrow, so a special house with plenty of bedrooms for a family and friends was born.
This house was within walking distance to the Town of Bethany; its beaches, boardwalk, shops and restaurants. It was located in a quiet street in Bethany. Instead of coming through the front door all wet, you could come from under the house and leave your beach belongings there.

Upon John’s passing, we called Jeff and we also called the buyer who was from Northern Virginia. I cannot imagine their thoughts in having to then deal with the widow. Having been assured that the building was going to go as planned, they were confident in our ability to carry it through.
I am writing this post, which by the way, is very personal, since the year anniversary of John’s passing is around the corner. I wanted to tell you the kind of builder Jeff was for us. The first thing he said without hesitation was “I will make this process as easy as I can for you.” And, he did.

Spiritually, John was guiding me through this process. I believe that.
The house turned out to be so nice. I met the owners on the day of the settlement when we were checking the house.
The floors were hand-scraped wood flooring, the tones of the house were soothing, lots of gray, white and blue on the walls and countertops.
The family is going to love having all those bedrooms and bathrooms. A spacious laundry room…a must!
I know that when the owners come up the stairs they will certainly enjoy the smooth flowing of their beach house. They are already enjoying it, along with everything Bethany Beach has to offer.
This family had been coming to Bethany for many years. They told me they were waiting for the right house….The Tidewater is going to be a place for rest and relaxation. Bethany Beach is a family resort. It is also known as The Quiet Resort.
Jeff Burton surprised me on that day. The Tidewater is going to be always The Tidewater; in memory of John. I will probably not have any contact with the new owners. Our business is finished. But, this house will always hold a special place in my heart. John would have been so proud.

Are you ready to Visit Southern Delaware?

Tonight was the night…a graduation of sorts. I think in a post about 16 weeks ago, I might have mentioned that I had committed for 1 year to a program where we were going to be counting fats. NIH did a 5 year, landmark program and that’s what we have been following. I feel so much better…and my doctor agrees.
For those 16 weeks, a group of strangers at the beginning…they are now friends. We have met once a week. We have talked and talked and counted fats and rallied for each other. Also, the scale has been used once a week, as well. We all see less of each other.. haha. The program continues for another 8 months, but we will only be meeting once a month. Still continuing with what we have learned…a low fat diet, plenty of exercise, and a good disposition.
So, we all got together…and a pot luck dinner took place.
But, I guess bad habits are hard to break so, I am starting with dessert. Both desserts, the Trifle and the Peanut Butter Pie, were made to fit our new way of eating. So I’ll start with the Trifle.
Pat brought this Trifle and it was truly delicious. It was light, refreshing, easy to make, and low fat.
SKINNY STRAWBERRY SHORTCAKE TRIFLE
5 cups or 2 pints, fresh strawberries, sliced
2 cups fresh blueberries
1/2 cup store-bought prepared strawberry glaze
1 (14 ounce) ready baked, fat free, angel food cake, cut in half and into 1-inch cubes
1 8 ounce container fat-free frozen Cool Whip (Pat used the low fat.)
2 snack packs of already prepared fat-free vanilla pudding
In a large serving bowl or trifle dish, place half the angel food cake pieces on the bottom of bowl.
Sprinkle about 2 cups strawberries evenly over the cake.
Dollop 1 package of pudding all over top of berries.
Sprinkle with 1/2 cup blueberries and drizzle with 1/4 cup strawberry glaze over blueberries.
Spread 1/2 container Cool Whip evenly over glaze.
Repeat the steps starting with angel food cake and ending with Cool Whip. Decorate top of the Strawberry Shortcake Trifle with remaining sliced strawberries and blueberries.
Chill for at least 1 hour before serving. Store any leftovers, if any, covered in the refrigerator.
I did enjoy my guilt free desserts…the one on the left is the Peanut Butter Pie!!

The 27th Annual Statewide Law Enforcement Torch Run began tonight with a send-off at 7 p.m. from the Rehoboth Beach Bandstand. In the 26 year history of Delaware Law Enforcement for Special Olympics, more than $4.3 million has been raised.
I was so surprised to see cars bumper to bumper on Coastal Highway around 8 p.m. Then, I saw it. The “Flame of Hope”. The very front officer was carrying it. It will be carried by over 500 police officers 160 miles over 3 days across the state, leading up to the Opening Ceremonies of the 43rd Summer Games. Delaware is the only state in the country that runs a lit “Flame of Hope” the entire length of the state prior to its Summer Games.
Runners lead the “Flame of Torch” out of town with the first mile dedicated to Cpl. Chris Shea, DSP, who was tragically killed in a traffic accident. The flames stops for the night at the Delaware State Police Troop 7 in Lewes.
The Torch Run resumes on Thursday in 3 Sussex Country locations: Delmar, Lewes, and Georgetown. The 3 Sussex County legs of the Torch Run unite in Harrington, where the 3 torches will become one and the run will continue north through Kent County. Ceremonies will take place at Legislative Hall in Dover at 2 p.m., Wilmington Police Dept. on Friday, at 1:20 p.m. and the Summer Games Family Picnic on Friday, at 5 p.m. All times are approximate.

Join the Delaware Choral Society, under the direction of Dr. James Wilson, for their spring concert presentation featuring a compilation of 20th Century American music, including songs by Leonard Bernstein, Smauel Barber, Randall Thompson, and many more!!
Program Highlight: “Have Ye Not Known”? and “Ye Shall Have a Song” from Randall Thompson’s The Peaceable Kingdon.
Randall Thompson is recognized as one of the finest composers of American choral music for major works, which often incorporated jazz, folk music, and American text into an eclectic body of music, which also included orchestra and piano works, operas, and chamber music. The Peaceable Kingdom was commissioned in 1936 by the League of Composers for the Harvard Glee Club and the Radcliffe Choral Society, and it was inspired by a painting of the same by the naturalist Edward Hicks entitled the “Preaching Quaker of Pennsylvania”. The painting depicts Isaiah, Chapter XI, verses 6-9. In Thompson’s work, the selected verses are proclaimed by the chorus and their meaning sets the stage for a variety of choral techniques: opposing choruses expressing the contrast between blessings bestowed on the righteous and woes inflicted upon the wicked, soprano and bass lines mirroring each other (one moves up in pitch as the other moves down and vice versa), and double choruses whose fullness of parts embody overwhelming joy and gladness of heart.
