Meatless Monday!! Black Bean Burgers, Easy, Tasty, Rehoboth Beach Eats, Delaware Beaches, Southern Delaware, Recipes Begged, Borrow & Stolen

I don’t even know when I decided to put recipes for Meatless Monday.  Some Mondays I do not follow this global movement.  But others, like tonight, made me want to construct a Bean Burger….The recipe is stolen, adding my own twist.

Meatless Monday started in 2003, launched in association with the Johns Hopkins Bloomberg School of Public Health.  It has been catching on.  The movement is active in about 36 countries.  Every nation brings its uniqueness…culture, customs, and cuisine to the table in meat free dishes.  To learn more, please visit http://www.meatlessmonday.com.

Monday is the chosen day because we see it as the beginning of the week.  I get it, I get it….I always start my diets on Monday.  It is a fresh start.  Yeah, and at times is downhill from Monday on.

This recipe is so easy.  A little bit of this and a little bit of that.  I am sure you can make it your own, as well.

A BLACK BEAN BURGER FOR MEATLESS MONDAY

2 cans black beans, divided, rinsed and drained (I bought low sodium beans)

1 small chopped yellow onion

1/4 cup chopped parsley

1 minced garlic clove

2 teaspoons cumin

1/2 teaspoon Kosher Salt (optional)

1 teaspoon black pepper

2 tablespoons oil for frying pan (your preferred oil)

3/4 bag of frozen peas and carrots

1 cup panko (I bought Chipotle Panko)

2 eggs

Puree 1 can beans, onion, parsley, garlic, cumin, salt, and pepper in a food processor until smooth.  Mine looks a little chunky because I do not own a food processor.  The blender was a pain, but I did it, somewhat.

To the burger mixture, add the other can of beans, the peas and carrots, the panko and the eggs.  Mix to combine.

Heat a skillet to medium heat.

In the meantime form the burger patties.

Place them in two batches in the skillet and cook until browned.  About 4 minutes on each side.

Serve on rolls….I chose this Pretzel Roll.  Add lettuce, tomato, ketchup, mustard and avocado.

Or serve on a salad if you are not eating carbs.

Friday, Saturday, Sunday, April, 10th, 11th, 12th – DEWEY BEACH & REHOBOTH BEACH BACON FEST – Spend Friday, Saturday, and Sunday sampling bacon delicacies in Rehoboth and Dewey Beach!!  Best information for this upcoming event can be found at http://www.idewey.com.  22 locations of Bacon Pleasure!!  For the competitors there will be prizes for 1st Best Bacon on the Beach, 1st Dewey Beach Bacon Fest, and 1st Rehoboth Beach Bacon Fest.  Restaurants, Caterers or Bacon Artisans, are all welcome.  Competitors must have their Best Bacon on The Beach sample ready by Noon on Saturday, April 11th and by 10:30 a.m. on Sunday, 4/12. On March 19, 1891 it was first called Cape Henlopen City.  In 1893, the name was formally changed to Rehoboth.  Since then, Rehoboth Beach has been welcoming thousands of visitors not just in the summer, but year round.  It is a destination for many, and for a lot of us, it is also home.  Living at the beach is great, and, believe me, I do not take it for granted.

Wednesday, April 8th – READ A MOVIE – The Rehoboth Beach Film Society and the Rehoboth Beach Public Library invite film and/or literary enthusiasts to Read a Movie screening of “The Duellists” at 4 p.m. in the upstairs community room of the library.  Based on the short story, “The Duel” by Polish-born writer Joseph Conrad, this film depicts a historically accurate account of early 1800s France.  This screening is part of the monthly Read a Movie series in which members read a little-known short story in advance of the screening, then gather to watch the film and share their thoughts about how well or not so well the story was expanded to the big screen.  To sign up and receive the stories in advance, email Denise Hoban at outreach@rehobothfilm.com.

Friday, April 24th – REHOBOTH BEACH FILM SOCIETY APRIL’S MONTHLY SCREENING – RBFS presents this year’s Academy Award nominees for Best Animated Short Film.  The screening will be held at the upstairs screening room at Movies at Midway on Coastal Highway.  Doors open at 6:30 p.m.  A rare opportunity to enjoy one of the most entertaining categories at the Academy Awards-Best Animated Short Film. Meatless Any Day! Spinach Gratin, Casserole, Easy, Recipes Begged, Borrowed & Stolen….Gluten Free, Delaware Beaches Eat!

Meatless recipe….but the day is perfect for a nice hot chili!!

This recipe is totally stolen.  Cannot take any credit for it.  It is a recipe from Ina Garten, The Barefoot Contessa.  It comes out so good and it can be served by itself, or, as a side dish for meat, chicken or fish.  I have served it with a Turducken and I just served it for Christmas Eve dinner with my small standing rib roast from Hickman’s in Rehoboth Beach, Delaware.

Spinach Gratin and sliced tomatoes on the side…yummy!  It is by no means a low fat, low cal recipe but some adjustments can be made….substitute the butter for something lighter.  The heavy cream can be half and half, and the milk can be low fat, as well.

SPINACH GRATIN

4 tablsps. usalted butter

4  cups yellow onions, chopped

1/4 cup all purpose flour

1/2 tsp nutmeg, grated (I used ground)

1 cup heavy cream

2 cups milk

5 10-ounce packages of frozen spinach, defrosted

1 cup freshly grated Parmesan cheese

1 tablespoon Kosher salt (optional)

1/2 tsp ground pepper

1/2 cup grated Gruyere cheese

Pre-heat oven to 425 degrees.

Melt the butter in a frying pan over medium heat.  Add onions and saute until translucent.  About 10 minutes.  Add the flour and nutmeg and cook stirring for a few more minutes, making a roux.  Add the cream and milk and cook until thickened.

Squeeze as much liquid as you can from the defrosted spinach.  Add the spinach to the sauce.  Then, add 1/2 cup of the Parmesan cheese and mix it well.  Season with salt and pepper if you want to.

Transfer the spinach to a baking dish, 9 x 13, and sprinkle the remaining 1/2 Parmesan and the Gruyere on top.  Bake for about 20 minutes or until hot and bubbly.

Serve and enjoy!!

Eat Meatless Sometimes…And Loving It! Barley Waldorf Salad, Pearled Barley, Easy, Nutritious, Delaware Beaches Eat!! Recipes Begged, Borrowed & Stolen

My tiny bag of pearled barley is part of my decor….does not fit in any cabinet.  Barley has a low glycemic index.  It is also the highest in fiber of all the whole grains.

Check this recipe out!!  It is a Stolen Recipe…not my own, even though I usually try to make recipes my own…in this particular recipe the lettuce used was not the one suggested.  It worked out just fine.

BARLEY WALDORF SALAD

3/4 cup pearled barley

1/4 cup plain low-fat yogurt (I used non-fat yogurt, instead)  Anything to help the battle of the bulge.

3 tablespoons light mayo

1/4 teaspoon of finely shredded lemon peel

1/4 teaspoon of lemon zest (This was an extra addition, it gave it a better lemony taste.)

1 tablespoon lemon juice

1/4 teaspoon sugar (I used Stevia.)

1/4 teaspoon of Sea Salt

1 1/2 cups seedless gred graves, halved (I bought the smaller seedless ones.)

2/3 cup corsely chopped red apple

1/2 cup finely sliced celery

lettuce….Any leaf lettuce will do.  The recipe called for 8 leaves of butterhead, Boston or Bibb lettuce.  I tore my lettuce leaves.

1/4 cup walnuts and walnut pieces….toasted

In a large saucepan toast pearled barley over medium to low heat for about 4 to 5 minutes or until golden brown, stirring.  Add 4 cups of water.  You can also cook it in unsalted chicken broth, like I did.  Bring to a boil, then reduce heat and simmer covered for about 40 minutes until tender.  Drain and rinse.  Set aside to let it cool off.

The rest of the ingredients are just an easy assembly.

In a large bowl combine yogurt, mayo, lemmon zest, lemon juice, sugar, and salt.  Stir in cooked barley, grapes, apple and celery.

Toast the walnuts in a medium heat over the stove, in a frying pan.

To serve, spoon barley mixture over your choice of lettuce.  Sprinkle with walnuts and garnish with the shredded lemon peel.

I thought it was great….one of my sons thought it was okay!!  You decide.

From the Delaware Tourism Office comes great news for those of us that have the ability to pass on information about our small state.  Sought after by many as a place for retirement, for fun, and for relaxation, the Delaware Tourism Office is really campaigning so that when it comes to your vacation choices…..Delaware is It!!

It is the first time in the state history, that the Delaware Tourism Office has created a brand identity, a tagline and even television commercials designed to increase national awareness of Delaware as a desirable place to vacation.  Many of us know that already, now we want you to check it out.

It is called the “Endless Discoveries” brand campaign.  It aims to boost visitation and tourism revenue in Delaware by creating an image in consumers’ minds of the state as a destination that will surpass any preconceptions.

The Director of the Delaware Tourism Office states:  “The challenge has always been to show others that Delaware is far more than just a place they pass through on I-95”.   That, I have heard….receiving a call saying “We are on 95 going to such and such place…passing through Delaware….and, are you close by?”

I found this interesting…The brand campaign messages were specifically designed to resonate with female consumers, who have been shown to statistically more likely to take the lead in vacation planning decisions.  The campaign is expected to reach hundreds of thousands of people in 16 East Coast states.

The new logo above shown, along with the words Endless Discoveries is hoping to spark the travelers’ curiosity and make them want to learn more……The Director of the Delaware Tourism Office, Linda Parkowski, goes on to state “The next step was to create words and images that fit that concept, and give travelers a sense that Delaware has treasures waiting to be found.”  Some of us have found those already!!

Happy New Year!! Hello 2015, Delaware Beaches, You are Looking Good for 2015!!

It was early New Year’s Eve in Rehoboth Beach.  The Boardwalk was quiet and it was 29 degrees…brrrr!!  Downtown Rehoboth Beach was so clean and ready for those revelers that would be celebrating the beginning of a New Year.

Resolutions?  I always start the New Year with wanting to lose weight, be a better person, and a better friend.

I stayed home with my children.  I love Shrimp Creole based on Chef Paul Prudhomme’s recipe on New Year’s Eve.  I make it my own, though.  The step by step recipe can be found on AboutMyBeaches.  Just click on the month of January, 2013 and scroll down to the 29th.  It is an easy recipe that most can be made ahead of time.  Add a spinach salad and you really have a beautiful meal.

Michael decided that his strawberries were blog worthy.  Here they are!!

What I could have given to find a place like Shell We Bounce when my kids were young!! Shell We Bounce is fairly new to the area but parents have found it quickly.  It is a family owned business.  Located at 20699 Coastal Highway (Rt. 1) between Rehoboth Beach and Dewey in the stretch known to locals as the “forgotten mile”.  Plenty of parking available year-round.

I had to meet Stuart and his son, Max….Max was having some playing time today.  Damp and cooler temperatures….kids are out of school!!  At the counter, everyone that comes in has to sign a waiver…painless to do.  Already plenty of parents were on site.  Some sitting, and watching and others interacting much more.  Shell We Bounce has plenty of staff available to see that everyone is safe.

The area called Zoo Animals Inflatable are for toddlers……recognize the red head toddler having a great time, while his mother watches?  A local!!

I remember when I first moved to Bethany Beach so many years ago.  At first not knowing anyone.  But, it was only when I had my children and went out to take them to enjoy what was then available at the time, that I started to meet those friends in the same position and we have been friends forever.  As I looked at these parents today, it brought memories.

Please remember that this is not a drop-off for childcare.  The only time that drop offs are allowed is when there is an organized event or a Parent’s Night Out.  The place has great lighting, fun colors….and the kids are having fun!!
