Happy Easter!! No better place than being in Rehoboth Beach. Church and a visit to Downtown Rehoboth was a must on this windy and chilly day!! Breathing the salty ocean air….definitely reinvigorating and a must!
It was early and a few were already walking their pooches and exercising. Michael and I decided that we needed to visit Mel at The Coffee Mill, located in the Rehoboth Mews on 127 Rehoboth Ave., Suite B. It is the oldest coffee shop in Rehoboth Beach and to tell you the truth, it is the best! Let’s say it is a daily addiction. Website? http://www.coffeemillrehoboth.com. My Breve was exactly what was needed. The Coffee Mill has available seating outside, as well. But, we took ours to go; not before a few photos were taken.

Rehoboth Beach has been very crowded this week-end, and pretty soon the summer residents and visitors will be here….parking meters, crowds, etc. etc. So, I am loving walking, strolling, eating in Rehoboth Beach in the Spring.

The sun is not even out, and who knows how the weather will be today, but the start of a Sunday morning or any morning for that matter, in Rehoboth Beach is with a cup of mocha from one of my favorites…The Coffee Mill. I missed the Apple Scrapple Festival in Bridgeville, Delaware this year. And, the weather did not cooperate either. But, I decided to pay homage to another favorite….Scrapple. My Scrapple Chipotle Cheese Muffins recipe is one of those that is, definitely, a little bit of this, and a little bit of that. In my kitchen I found gluten free, flour, and in the refrigerator I found, eggs, cheese, evaporated milk, onions, pickled jalapenos and….imagine this….Rapa Chile Chipotle Scrapple!! These were going to be some hot muffins!!
I sliced half a pound of the scrapple and proceeded to fry it in the pan.
Chop half of an onion and saute in the same frying pan. Add about 1/4 cup or more of chopped pickled jalapenos. Add the chopped scrapple and mix it all in. Let the flavors mingle…haha. Turn heat off and just let them rest. In the meantime, pre-heat oven to 350 degrees.
To make it easier, use a muffin mix or pancake mix. I used a gluten free Bisquik mix…about 1 1/2 cups. You can follow the recipe on the box or just add one egg, milk to make it thicker than pancake mix, the scrapple mixture, 1/2 cup of cheddar cheese. My muffin pan was deep, so I only got 6 large muffins. Fill them, sprinkle with extra cheese, and bake in the oven for about half hour to 40 minutes, again, depending on your muffin pan and until the knife inserted comes out clean.
Out of the pan and into a plate….they disappeared quickly.
The idea is that when you bite into the muffin you can get the flavors of the scrapple, onions, cheese and jalapenos….spicy but pretty good. Now make them your own!!
Please note that this recipe is not gluten free. Scrapple has gluten. Too bad.

It was late afternoon, a little cloudy in Rehoboth Beach, and a slight chill in the air. A cup of coffee to recharge was in order. On Thursday afternoon Rehoboth was somewhat quiet; plenty of parking available, which I loved.
My son, Michael and I decided to stop at The Coffee Mill, located in the Rehoboth Mews “Alleyway”, at 127 B Rehoboth Avenue. Tel. 302-227-7530. Website? http://www.coffeemillrehoboth.com. The Coffee Mill is currently celebrating its 20 years in Downton Rehoboth Beach. It opens at 7 a.m. year-round. As we came in the feeling was that this was a true coffee shop. We met Vit, our Barista. The Coffee Mill has over 100 coffees and teas. Every day there are 6 different coffee blends available.
The coffee shop offers periodicals, art, t-shirts, wireless internet, and outdoor seating, as well.
I knew exactly what I wanted the moment I saw it. A large Breve. Breve is short for espresso. Have it with half & half or semi skimmed milk. The half & half increases the amount of foam. Vit outdid himself. I can confidently say that it was the best coffee I have had in Rehoboth Beach.
We proceeded to sit outside under the red umbrella to enjoy our coffee indulgence; tables are set up and down the alleyway.
The Coffee Mill’s specialty is coffee, but they also serve baked goods, sandwiches and salads.
