Meatless Monday! Red Mushroom Bisque, Recipe, Easy, Vegan, Gluten Free, Rehoboth Beach VegFest, Friday, 6/13 through Sunday, 6/15, Rehoboth Beach, Delaware, Southern Delaware

Meatless Monday is a trend that has been taking the nation by storm…..just a day to stay away from meat!!   So, as the weather in Rehoboth Beach turned a little cloudy, I thought that the Red Mushroom Bisque would be a good alternative to anything else you might have thought preparing.

First of all, the original recipe has been completely deconstructed….it is my own now.  Hope you like it.

RED MUSHROOM BISQUE

2 tablespoons vegetable oil; more if needed

1 1/4 lbs. mushrooms…..I used two different types of mushrooms; your favorites will do.

Salt and pepper to taste

2 tablespoons olive oil

1 onion, chopped

2 garlic cloves, minced

1/3 cup Sherry or Madeira wine….or a bit more, if you want to.

3 cups unsalted vegetable broth, plus more if desired.

2 cups almond cream (recipe will follow)

Chopped Chives for garnish

White Truffle Oil for garnish

Basil paste for garnish (found at grocery stores, by the fresh veggies)

Heat a large soup pot on medium high heat.  Add the vegetable oil, then mushrooms.  Cook, stirring often until the mushrooms begin to brown.  Remove from the heat, spread on a plate and let them cool off.

Season the mushrooms with salt and pepper.

In the same pot, heat the olive oil over medium-high heat and add the onions, cooking them until translucent and slightly browned.  Add the garlic, then, the Madeira or Sherry, scrapping the bottom of the pot.

Add 3  cups of unsalted vegetable broth and half of the cooled mushrooms.  Simmer and remove from heat.

In your blender, blend the mushroom mixture.  Return the blended mixture to the pot.

Whisk in the almond cream.

Heat the soup, having in mind that it could thicken as it heats up.  If it does that, you can add a bit of the unsalted vegetable broth and that will take care of it.  I don’t think you will have any problems, though.

ALMOND CREAM

1 cup raw almonds

1 large clove garlic

6 or 7 cocktail tomatoes cut in half….they are bigger than the grape tomatoes.

1/2 teaspoon sweet paprika

2 tablespoons balsamic vinegar

1/2 cup unsweetened almond milk

2 tablespoons of basil paste, found by the fresh veggies in the grocery store.

In a high powered blender or Nutri-Bullet, which is what I used, put all the ingredients and blend until smooth.  That’s all!  It will be like a cream, not totally smooth, but close to it.

Serve your Red Mushroom Bisque on a pretty bowl and garnish with chives, basil paste and drizzles of truffle oil.  If you do not have truffle oil, you can use your favorite oil.

1st Annual Rehoboth Beach VegFest, Outdoor Festival, A Success in Rehoboth Beach, Delaware, Exhibitors, Speakers, Tastings, Delaware Beaches, Southern Delaware

Animal friendly cuisine, the benefits of choosing plant based foods.  I wanted to learn more.  Then, I came upon the card that announced an upcoming new festival in Rehoboth Beach….VegFest!  It would be a vegetarian celebration at the Beach.  It would feature speakers, cooking demonstrations, samples, exhibitors, food vendors and a little something for everyone…loved the vegetable garden, including the sensory garden where kids could touch and feel what was growing.

The festival was sponsored by Compassion Over Killing (COK), a national non-profit animal protection organization based in Washington,DC.  COK has another office in Los Angeles.  Since 1995, they have been working to end animal abuse.  If you are in Washington  on Saturday, September 28th, COK will be presenting DC VegFest.  More info?  Please visit http://www.cok.net.

In Rehoboth Beach you will find a social and outreach organization called VegRehoboth, a sister sponsor to this outdoor festival.  It is open to all residents and visitors to our beaches.  Even if you have that curiosity.  Some people want to cut back, some are vegetarians, vegans, and some called themselves part-time vegetarians.  VegRehoboth hosts social gatherings; make new friends, information and great food.  For more information, please visit http://www.vegrehoboth.com.

VegFest was held on a hot day but with a nice breeze.  Tents were set up to accommodate the speakers and cooking demonstrations.

One of the speakers, Dr. Ruby Lathon who is a holistic health and wellness expert is an advocate for plant based nutrition.  She made a couple of dishes, one in particular, caught my attention.  Made with kale and mango.  As soon as I get the recipe, I will put it on the post.  It looked so easy and it was delicious.  To learn more about Dr. Lathon’s story, please visit http://www.rubylathon.com.

Continued on my VegFest strolling, I stopped next at Rehoboth Beach Pet Sitting Service.  This, in your own home, pet care service has been in the area for a couple of years.  They serve Rehoboth Beach and Lewes.  They are insured and bonded.  Owned by Lynn Barnett and Brent Joyce Finkbiner.  Tel. 302-827-4966.  They are another option, in case you do not want to take your best friend to a boarding facility.  If your pet needs medication, they are able to take care of it, as well.  Website?  http://www.rehobothbeachpetsitting.com.

Another stop at Delmarva Board Sports Adventures.  For the entire family, from Lewes to Assateague.  Stand Up Paddle Boarding.  They have a new waterfront location on Rt. 54 and the Bay in Fenwick Island, next to Harpoon Hanna’s.  They offer a Cape Henlopen Delaware Dolphin Excursion, paddling the calm waters of the Delaware Bay in search of the many dolphins who frolic nearby.  How about SUP Wellness?  Yoga, and meditation on a paddle board.  You may call to reserve your spot.  Classes are held on a secluded Delmarva pond.  Windsurfing lesson and rentals, as well.  To know more, please visit http://www.delmarvaboardsportsadventures.com.

It is called MERR, and that was by next stop.  This is a non-profit stranding and rehabilitation organization completely committed to marine mammal and sea turtle rescue and conservation.  They are first responders for stranded mammals and sea turtles.  Their new automobile license plate is now available.  It passed the House & Senate and was signed into law August 1st by Governor Jack Markell; also approved by the DMV.  So, if you are a resident of Delaware…one time fee of $50; MERR gets $35 back.  More info?  Please visit http://www.merrinstitute.org.

What’s Going On? Rehoboth Beach, Delaware, Activities, Events, Entertainment, Delaware Beaches, Southern Delaware, TGIF!!

Another gorgeous, hot summer day in Rehoboth Beach!!  It’s Sea Fever at the Delaware Beaches.  It is our time to shine.  During the winter many head south; this time of the year the Mid-Atlantic beaches is the place to be.  Rehoboth Beach has unobstructed beaches…you won’t even have to move your chair once you claim your spot.

There are so many events and activities.  You can pick and choose what to do, or do nothing at all.  But, if you do want to know….here is What’s Going On.

Saturday, 6/1 – It is the first Rehoboth Beach VegFest.  A vegetarian celebration at the Beach.  11 a.m. until 5 p.m. at Epworth United Methodist Church on 19285 Holland Glade Rd. On Rt. 1, take a right after Tomato Sunshine.  The church is right there on your right.  Cooking demos, exhibitors, kid’s activities, veg food and very interesting speakers, you do not want to miss.  More info?  http://www.rehobothvegfest.org.

Saturday, 6/1 and Sunday, 6/2 – Eating Rehoboth Walking Food Tours – You Eat, You Sip, You Walk, You Discover!! The moment the Rehoboth Beach Independent Film Festival ends…the works starts all over again. The 2013 Rehoboth Beach Independent Film Festival will take place November 6th through the 13th.  I was so happy to see that Damon Pla has been chosen once again as the winning artist to portrait the theme of this year’s festival.  His acyrlic on canvas titled “Old Man and The Must See” is the selection for the 16th anniversary of the Rehoboth Beach Film Festival.  Posters, programs, ads, t-shirts, and other materials will be released in July.  In 2011 Damon Pla’s work was also selected.  When asked what his inspiration was for this year’s piece, he replied “Old Man and The Must See” is based around the fascination of a combination of machines working together to serve one purpose, accentuating a journey, not a destination.  In this case, emphasizing the work of the camera, not the subject being filmed.

FILM ENTHUSIASTS:  Enjoy a unique opportunity to screen film submissions for this year’s Rehoboth Beach Independent Film Festival.  The screenings will be taking place at the Movies at Midway on Coastal Highway in Rehoboth Beach and at the South Coastal Public Library in Bethany Beach.  The film screenings will begin at 7 p.m.  Admission? $2 at Movies at Midway, but free at the library in Bethany.  Tel. 302-645-9095.  Please visit http://www.rehobothfilm.com.

The Beach Eats – Exhibit at the Rehoboth Beach Museum – A celebration of eating in Rehoboth Beach.  The museum is located at 511 Rehoboth Avenue by the roundabout and Rehoboth Beach Chamber of Commerce.  It is a fun exhibit.  I wrote a post on May 23, 2013 so if you want to take a peek just click on the month of May, 2013 and scroll down to the date.  The iconic restaurants in Rehoboth Beach paved the way for the present restaurants.  Remember Sydney’s?  Sydney mentioned to me that having the restaurant at that time was “A Moment in Time”.  It certainly was.  So much fun and great food accompanied by amazing music.  Check it out…it is worth it.  More info?  Please visit http://www.rehobothbeachmuseum.org.

Doggies at The Beach is a 3,500 square foot indoor-cage free facility…my dog’s, Addy’s, favorite.  She feels like she is at home.  Can’t say enough about them.  Jim and his staff are true dog lovers.  Web cams, grooming, 24 hour supervision, training.

Reminder:  Parking Meters are in effect in all Delaware Beaches.  In Rehoboth Beach, meters run from 10 a.m. until midnight daily.  $1.50 per hour.  Quarters and credit card via Parkmobile app accepted.  Credit cards are not accepted at parking merters.  Parking permits are required daily from 10 a.m. until 5:00 p.m. in all non-metered areas.  Scooters may park in car spots and pay accordingly or purchase a $40 permit to park in dedicated scooter spots.
