Gates have opened and visitors have been arriving since Thursday evening.  A beautiful day in Delmarva with blue skies, slightly cool temperatures, and no humidity….So perfect and hard to believe that there is no rain in the forecast for Memorial Day!!

Boardwalks are the center of the coastal towns of Rehoboth Beach, Bethany Beach and Ocean City, Maryland.  Early in the a.m. joggers, bikers, walkers….pooches too, are seen enjoying glorious days at the beach.

Rehoboth Beach, Delaware, is also known as The Nation’s Summer Capital.  The award-winning Boardwalk is a mile long.  Just make sure that when you get to the end on both sides of the boardwalk you touch the railing….it’s a local’s thing.  The entertainment begins on the Boardwalk every week.  Check http://www.rehobothbandstand.com

Recipes Begged, Borrowed, or, Stolen, Roasted Butternut Squash with Corn, Red Onions & Cranberries, Rehoboth Beach Eats, Meatless Any Day! Delaware Beaches, Southern Delaware

The gates are beginning to open…..Summer 2015 officially opens next week.  Yikes….a new way of trying to figure out when to go here or there.  Welcome to the Delaware Beaches!!

Even though my recipes can, at any time, be begged, borrowed, or stolen….this recipe was given to me as a gift by my friend, Jody.  It is totally delish and you can serve it by itself for any meatless day; with a salad for a complete veggie meal.  Or, just let it sit by the side of beef, chicken or fish.

The main ingredient is a butternut squash.  This fruit/vegetable is full of Vitamin C, A, & E.  It is also a good source of manganese, magnesium and potassium.

Butternut squash can be roasted, toasted, pureed for soups, or mashed and used in casseroles, breads and muffins.

2 new sauces for this recipe, and they are easily found at Peppers on 176 Coastal Hwy. #1 in Lewes, Delaware.  The Garlic Pepper Sauce made out of aged red peppers and garlic and the Peri Peri Pepper Sauce which is a blend of Moroccan flavors.

ROASTED BUTTERNUT SQUASH WITH CORN, RED ONIONS & CRANBERRIES

1 2 lb. butternut squash, peeled with a veggie peeler

1 large red onion, chopped into bite size pieces, not diced

4 Tbsps. Olive Oil

2 Tsps. Garlic Pepper Sauce (Mountain Man)  Taste it and add more….I did.

2 Tsps. Peri Peri Pepper Sauce (Warrior’s Potion)  Taste it and add more…I did.

1 Tsp. Sea or Pink Himalayan Salt

1.5 Cups Frozen Corn or steamer bag of “honey roasted corn”

1/8 Tsp. Cayenne Pepper

1/2 cup dried cranberries

3/4 cup chopped cilantro

Pre-heat the oven to 400 degrees.

Chop the peeled butternut squash into circular disc pieces then cut in cubes from the discs.  Lightly toss the pieces in olive oil or in coconut oil and a bit of salt.  The smaller the pieces are, the faster they will roast in the oven.

Put on a baking tray lined with parchment paper.  Bake in batches for about 10 minutes.  You want them tender but not mushy.

Heat the olive oil in a frying pan and saute onion.  Add corn, hot sauces, salt, and cayenne to the onions and stir for a minute or so.  Then add cranberries.

Add the roasted squash cubes to the mixture and stir for a few minutes to allow the flavors to blend.  Then add the chopped cilantro.

This recipe has a very good combination of flavors….a little heat, the sweetness of cranberries, and cilantro.  As usual, make it your own.

Delaware’s Ghost Towers, Standing Tall, WWII Towers, Delaware Beaches, Southern Delaware, Sussex County

The WWII Towers continue to stand tall.  They are the subject of my post when we celebrate today the end of WWII.  These towers are silent sentinels of WWII.  There are 11 towers in Delaware.  Up and down the coastline you see them, but  do you really stop to look at them?  Having been writing this blog since 2009 has made me more sensitive and interested on what’s around me.

It was believed that after Pearl Harbor, the Delaware Beaches were in danger.  During 1940-1942 there were huge fortifications erected at the mouth of the Delaware Bay to protect Philadelphia.

These ghosts from years past were used as artillery spotting locations.  Our military was posted in each of the towers to coordinate artillery fire on enemy ships off our coast.

From the upper level the spotters could scan the Atlantic for enemy vessels, therefore, they could direct the fire of the guns mounted along the coast.

The tallest WWII tower is 73 feet tall and the shortest is 37 feet tall.  Some have only 2 viewing slits, while others have 3 or 4.  A spotter could see 14 1/2 miles into the Atlantic.

Summer 2015 is almost here….Memorial Week-End officially opens the season.  As you come to visit us at the beach, take a good look around you….these WWII Towers might be standing as ghosts, but they are fascinating and have seen it all.

No sooner last year’s event had taken place, already they had the theme for the 2015 Annual Bethany Beach Breast Cancer 5K Fun Run & 3 K Walk…..Pirates!! Treasure Your Chest it is.  It takes place on Saturday, May 9th.

The Addy Sea was the 4th of 5 houses built by John M. Addy from Pittsburgh, PA.  It was one of the first homes to have indoor plumbing in Bethany.  Circa 1902.  In 1935, it was turned into a guest house.  At the present time, it operates as an adult B & B.

It is a venue for weddings and other celebrations.  They have their own catering service, as well.  Already, reservations for 2016 weddings are taking place for the months of May, June, September, and October.  So, if you like what you see on this post and are planning an event, give them a call.

Up and down the Delaware Beaches you will find a beach that will suit you and your family.  Having have lived in Bethany Beach for many years, the beaches here are wide and so unobstructed.  Some get a little crowded at the height of the season and others, just like this one at the Addy Sea’s edge, is the perfect place to park yourselves.

On March 19, 1891 it was first called Cape Henlopen City.  In 1893, the name was formally changed to Rehoboth.  Since then, Rehoboth Beach has been welcoming thousands of visitors not just in the summer, but year round.  It is a destination for many, and for a lot of us, it is also home.  Living at the beach is great, and, believe me, I do not take it for granted.

Wednesday, April 8th – READ A MOVIE – The Rehoboth Beach Film Society and the Rehoboth Beach Public Library invite film and/or literary enthusiasts to Read a Movie screening of “The Duellists” at 4 p.m. in the upstairs community room of the library.  Based on the short story, “The Duel” by Polish-born writer Joseph Conrad, this film depicts a historically accurate account of early 1800s France.  This screening is part of the monthly Read a Movie series in which members read a little-known short story in advance of the screening, then gather to watch the film and share their thoughts about how well or not so well the story was expanded to the big screen.  To sign up and receive the stories in advance, email Denise Hoban at outreach@rehobothfilm.com.

Friday, April 24th – REHOBOTH BEACH FILM SOCIETY APRIL’S MONTHLY SCREENING – RBFS presents this year’s Academy Award nominees for Best Animated Short Film.  The screening will be held at the upstairs screening room at Movies at Midway on Coastal Highway.  Doors open at 6:30 p.m.  A rare opportunity to enjoy one of the most entertaining categories at the Academy Awards-Best Animated Short Film. Party with a PURPOSE, Little Pink Houses of Hope, Fundraising Event, Thursday, March 26th, 6-8 p.m., NorthEast Seafood Kitchen, Ocean View, Delaware, Let’s Fill Those Seats!!

Everything looked so normal.  Just like any other get together at the beach.  Going fishing!!  Summertime, a time to relax and not to care about a thing…..If it only were that easy.  Just for one week it was for the families that came to Bethany Beach, Delaware, for this retreat last year.  The women had breast cancer and the journey to the beach was to get away and have fun.

The organization is called Little Pink Houses of Hope founded by Jeanine Patten-Coble.  Website?  http://www.littlepink.org.  The organizers in Bethany Beach were Annie Raskauskas and Stacy Shepps.  Annie and Stacy were backed up by the communities of the Delaware Beaches.  Big hearts in Southern Delaware.

When these families arrived at the beach their accommodations were all donated by area residents.  Besides their accommodations, they had barbecues, crab feasts, dinners, deep sea fishing…the community went all out.  Everything for them was free of charge.  Breast cancer like many chronic diaseases not only afflicts the person but the whole family.

When they arrived the families did not know one another.  When they left they were a united front and a very powerful and emotional thing to see.  The following photos are of the last day together having fun….fishing, a picnic, a pig roast, a birthday celebration, games on the beach…meet The Little Pinks and their families.

I am crushed that Fried Green Tomatoes…..not a Southern dish.  That they, apparently, entered the American culinary scene in the Northeast and Midwest, with a link to Jewish immigrants.  I love them and when I see them on menus, I do order them.  Having been in Charleston, I tasted them everywhere I could.  But, let me tell you that, here, at the Delaware Beaches, we have some pretty awesome ones served at our local restaurants.

BLUE MOON located on Baltimore Avenue in Downtown Rehoboth Beach.  This is a signature appetizer.  The fried green tomatoes are served with herbed sheep’s cheese, onion, compote, pesto and a balsamic drizzle.  Definitely, a blending of flavors.

TBONZ in Historic Charleston had these great fried green tomatoes….they went in my burger.

SOUTHEND BREWERY & SMOKE HOUSE, located in Downtown Charleston had never had anyone topped their pizza with fried green tomatoes.  Of course, pimento cheese was included.  The pizza did not wow me here.  But, the combination of pizza and fried green tomatoes was pretty good.

LOWCOUNTRY BISTRO, located in Historic Charleston has a great Ambrose Farms Spinach Salad….an addition of Fried Green Tomatoes made it just perfect.

The following recipe is soooooo good.  You can serve it with roast beef, chicken, or even in a sandwich.  It takes some time to make but once in the jars you can store them for a long time.  Give it as presents to special friends.

MERRYMAN’S GREEN TOMATO PICKLE

1 peck (8 quarts or approx. 20 lbs of small green tomatoes

6 red peppers

12 large onions

5 tablespoons celery seed

5 tablespoons mustard seed

1/2 gal. cider vinegar

3 lbs. light brown sugar

1 cup salt

Slice the tomatoes and onions very thin.  Cut peppers into thin strips.  Place alternatively (some tomato, some onion, some peppers) in layers in a large bowl, sprinkling salt over each layer.

Let mixture sit for several hours or overnight to draw out liquid.

Squeeze the pickle dry and place in a large kettle.  Pour vinegar, sugar, mustard seed and celery seed over pickle.

Cook slowly until onion is clear and tomato is almost transparent.  One to two hours.  Check and stir often.

Place in sterilized jars and seal.

Note:  It is usually served in my house during the Holiday Season.  It is an old Merryman recipe.
