Rehoboth Beach Eats! Quiche Lorraine, Simple, Savory, Versatile, Breakfast, Brunch, Lunch, Dinner….You Choose, Delaware Beaches, Southern Delaware

dscn6374

Plenty of restaurants offer the versatile Quiche for breakfast, brunch, lunch and even dinner.  It is that kind of dish.  My favorite is more of the traditional Quiche Lorraine.  It originated in Lorraine, France.  But, the word “quiche” come from the German word “kuchen” or cake.

My motto is “make it your own”, when it comes to recipes.  The same has happened with Quiche Lorraine; no two are created equal.  It is been said that, traditionally, the cream shoud be just that…cream, or even a stiff “creme fraiche”.  For my recipe, I used a light cream, trying to save calories and fat where I can.

Hope you like it.  It is very easy.  I do have a deep pie dish, but if you don’t, just cut the recipe in half.  I bought a prepared pie crust, and followed the directions on the package…making things so much more simple.

QUICHE LORRAINE

6 large eggs, slightly beaten

2 cups light cream

10 slices of bacon, crisply cooked and crumbled…I bought the low sodium bacon.

6 tablespoons Dijon mustard

1/2 cup finely minced onion

2 cups grated Swiss cheese

1/4 teaspoon salt…I did not add any salt because the bacon and cheese have plenty…up to you.

1/4 teaspoon pepper

Pie dough…if you want to make your own, it would probably be awesome!

Pre-heat oven to 375 degrees.

Combine all ingredients except pie dough…haha.  Pour into prepared pie pan and bake it for about 45 minutes to an hour. Closer to the hour, unless you cut the recipe in half.

It will be ready when a knife inserted in filling comes out clean.

Then, all you have to do is serve it and enjoy.

dscn6376

I served the Quiche Lorraine with a Kale Mango Salad.  Sounds weird to have served it with this salad, but it was great!!  The recipe for the Mango Kale Salad can be found on AboutMyBeaches.  Just click on the month of June of 2013 and scroll down to the 17th.  It is under Meatless Monday, Mango Kale Salad.  I got the recipe from Vege Fest in Rehoboth Beach this summer.

Have a great day!!

Touch of The Light, Rehoboth Beach Independent Film Festival, Rehoboth Beach, Delaware Beaches, Saturday, 11/9, 10 a.m. until Noon

dscn6351

Thanks to my friend Debbie who got us tickets to see an uplifting story of dreams, determination, love and believing in yourself.  Over the years I have seen plenty of movies at the film festival.  I must admit that some have been better than others.  Touch of The Light was excellent.

The Rehoboth Beach Independent Film Festival is going strong….no parking at the theaters.  Get there early.

dscn6368

Touch of The Light is based on the true story of Huang Yu-Siang who was a Taiwanese piano prodigy.  His gift was discovered when he was only 2 years old.  He could play songs on the piano that he had only heard once.  He became the first blind person in Taiwan to obtain a bachelor’s degree in music, majoring in piano.

The story relates to anyone has had to overcome obstacles in life in order to keep going forward to his or her dreams. It was Taiwan’s Oscar submission for Best Foreign Language Film.

Siang family was supportive.  At times his mother felt cold but she truly loved him and was so proud.

He leaves his family to attend the university….more obstacles because of his blindness.  His roommate was a riot.  Meeting Jie, a pretty but frustrated cold drinks vendor who dreams of being a dancer…she witnesses his fearless determination and understands his optimism and inner peace.  She is inspired by him to hold on to her dream.

Touch of The Light will be showing again on Saturday, 11/9 at 10 a.m. until Noon.  It is in Mandarin with English subtitles.  Worth seeing.

Then stop by the tent where people are chatting, eating, reviewing what they have just seen….

Have fun!!

dscn6351

The first film festival was held in Venice in 1932, and Dr. Jekyll and Mr. Hyde was the first film to be screened at the festival.  How about that little trivia?  Since then, film festivals have been established throughout the world.  Some of them better than others.

When the Rehoboth Beach Independent Film launched in 1998 it was done after a year of discussing the possibility of showing independent films in local restaurants.  Since then it has become a respected Mid-Atlantic event.  It is a 501(c)(3), not-for-profit organization, as well.  Film buffs come from the Mid-Atlantic area to enjoy features, documentaries, and shorts.

For complete info., please visit http://www.rehobothfilm.com.

There is a process regarding buying tickets.  To avoid standing in long lines, numbers will be distributed starting at noon outside the Big Tent.  Check http://www.rehobothfilm.com/festival_ticket_sales_policy.html

dscn6359

The Film Festival Box Office in the Big Tent will open for Associate Producer ticket sales at 12:30 p.m. on Wednesday, 11/6.  This tent serves many purposes.  Besides buying tickets and film souvenirs, it is also a gathering place.  Food and entertainment happens under the tent.

At 3 p.m. on Wednesday, 11/6, Student and Film Buff members may buy tickets for Wednesday films.  Numbers will be distributed starting at 2:30 p.m. inside the Big Tent.  Look for the “Get a Number” sign near the Box Office.

The Box Office opens to the public on Wednesday, 11/6 at 4 p.m.  The line length will let them know if they need to issue numbers.

Little Fig Cakes, Modern Mixture, Spanish Custom, Cafe Con Leche….Yum!! Delaware Beaches, Rehoboth Beach, Southern Delaware, Friday, 10/8, Saturday, 10/9, Dru Tevis will be making yeast donuts, Fresh and to Order

dscn6353

I remember growing up in the Island of Puerto Rico.  The Spanish culture is one that likes to enjoy the good things in life.  The small towns in Puerto Rico, when I was growing up, were what towns throughout the U.S. are trying to achieve now….that Main Street type of atmosphere.  That sense of being able to walk the sidewalks, greet your neighbors and plenty of times, be invited for a good cup of coffe, by a neighbor or relative…Cafe con Lefche, which is coffee with milk, or a Cafe Cortado, which only has some milk, or the classic Spanish Pocillo.  The coffee would be accompanied by a sweet pastry or cake.

Which brings me to my short post.  Leo Cabrera is the owner of Modern Mixture, located at 62A Rehoboth Avenue in Downtown Rehoboth Beach.  Tel. 302-227-0600.  Website?  http://www.modern-mixture.com His restaurant is the talk of the town.  Leo serves food that is fresh, healthy and exciting.  He closes on Tuesdays and on Sundays he is open until 3 p.m.  Otherwise, he is open.  You may call him and ask him what’s cooking on that particular day.

Modern Mixture is casual and Leo prepares great specialty drinks.

So, when Leo called me to tell me that he had fig cakes for me I ran.  The cakes were made with fig jam, from the figs tha I had given him.  They were so good and brought me those memories above mentioned….particularly the coffee at my grandmother’s house.

The little fig cakes had just the right amout of sweetness…the fig jam doing its job.  A little bit of cheese, complemented the fig jam.  The consistency was light and it reminded me a bit of cheesecake….definitely lighter, though.

dscn6357

I liked them so much I decided that they belonged as a featured post.  Thank you Leo….I loved them!!  So simple and sweet.

Note:  Stop by on Friday, 10/8 and Saturday, 10/9 at Modern Mixture from 6 p.m. until 8:30 p.m. when Dru Tevis will be making yeast donuts fresh and to order.

Rehoboth Beach Eats! Rotisserie Southwestern Chicken Lasagna, Short Casserole, Easy, Another Crowd Pleaser!!

dscn6309

It seems like my trees have turned overnight….they look gorgeous but I am not looking forward to all the leaves on the ground.  They seem to hang out at my yard for months.

It is so chilly and windy that an easy shortcut casserole would be perfect for dinner.  There is a key ingredient to this casserole and that is a Rotisserie Chicken….a must.  You will probably need just half of the chicken.  Use the rest for a chicken salad.  They make the best!

dscn6311

ROTISERRIE SOUTHWESTERN CHICKEN LASAGNA

2 cups shredded Rotiseerie Chicken

2 tablespoons lime juice

1 1/2 teaspoons chili powder

1/2 teaspoon pepper

1 chopped, small onion

2 garlic cloves, chopped

1 tablespoon vegetable oil

1 16 ounce jar of salsa (Choose, Mild, Medium or Hot.  Any brand will do.)

1 15 ounch can chili with beans

1 small can chopped green chiles

9 (6-inch) flour tortillas

1 (8-ounce) package shredded Mexican 4-cheese blend

Pre-heat oven to 350 degrees.

Combine the first 5 ingredients.  Set aside.

dscn6312

Saute onion and garlic in hot oil in a large skillet until tender.  Add salsa, chili, and green chiles.  Reduce heat, and simmer for about 3 to 4 minutes.

dscn6313

Line the bottom of an 11 x 7 inch baking dish with 3 tortillas; layer with enough chili mixture to lightly cover them, then half of the chicken mixture and a third of the cheese.

dscn6314

Repeat another layer.  Then, top with the las 3 tortillas.  Pour the last of the chili mixture and sprinkle with the last of the cheese.

dscn6315

Place in the oven for about 30 minutes.  Let is stand 5 or 10 minutes before serving.  It makes a great meal.  The chicken is full of flavor and all you have to do is add a salad or veggie and dinner is then served.

dscn6316

Make it your own and enjoy!!

dscn6232

Everyone loves a good deal, and treasure hunting is a past time.  In Bethany Beach, Delaware, the place to stop and look for antiques, lamps, sales, furniture and accessories is Beach Plum, located at 900 North Pennsylvania Avenue.  It is a Treasure Hunters’ paradise.

dscn6230

As I was leaving town I stepped on the brakes.  Visually, the store looked great.  Lots of colorful items outside….Beach Plum was fully stocked.

dscn6231

dscn6251

I could not resist taking George Cole’s picture.  Holding his basket he looked the part.  He has owned Beach Plum for 37 years.  He has also been our Sussex County Commissioner for 28 years.  He opens the shop every day.

dscn6234dscn6238

Hours of operation are 10 a.m. to 5 p.m.  Tel. 302-542-4564.  The fun  part of visiting Beach Plum is that it changes daily.  New items come in and plenty of others go out the door.  The buoys have been flying out the moment George gets them.  They are only $12.50 each and are very popular these days.

dscn6229

If you liked the boat…..well, it sold. I think it was going to be a decorative piece…hanging?

dscn6228

You can call Beach Plum if you are “cleaning” house.  They will be more than happy to assist you.  Shopping here is never boring.

dscn6233dscn6249

Stepping into Beach Plum’s porch you will then find many decorative wall art.

dscn6235

dscn6240

Inside, and protected from the weather, antiques, lamps and home accessories for every personal taste.

dscn6242

dscn6245

Beach Plum is known for the excellent condition of its items.  There is always a personal a story, some items are rare, but others are just the “trash”, discarded, that will become someone’s treasure.

dscn6243dscn6248

George is a fixture in the community….passing by Shelley yelled “did you sell it’?  Yeah!  The beauty of living in a small coastal resort is that you pretty much know everyone.  Wether you think that’s good or not, I don’t know.  I find it very comforting, to tell you the truth.

So, if you are looking for that special piece for the corner of your room or just love to treasure hunt….you never know what you are going to find…check out Beach Plum.  The Second Season at the Delaware Beaches is perfect for this popular past time.
