You see that photo above? That was my dog Addy. She was a rescue and one of those dogs that you will remember always. She was in my life during happy times but also on sad times, as well. Such a great comfort to have. Rescues give back so much.

At some point a friend must have been in my house and took a different photo from her and for Christmas she gave me the following Christmas ornament, handpainted. I love it and every year it takes a special place on my Christmas tree, which by the way, as I write this post, it is still up. Coming down today for sure.

What do you give someone for Christmas or any other ocassion that is meaningful? If you have a pet maybe something relating to them would be perfect. They would love it.

I don’t give a gift just for the sake of it. I want that person to know that I was thinking of them when a decision for giftgiving was made.

I was in Dallas this past Thanksgiving and taking photos, as usual, I took a photo of Ragnard (Raggie) as they all know him. Did not think anything of it until I got back to Rehoboth Beach and saw on Facebook a post from Lisa Lorelli Miller. In it she was showing that she was back into painting pet portraits. A lightbulb went on. I private messaged her asking her to see if she could do Raggie. She paints in oil now. Wait until you see what kind of work she can do. The first photo you will see is the one I took in Dallas and the second photo is her painting. You be the judge.

I am sure you are impressed. Look at those eyebrows!! Lisa can frame the paintings, as well. I had her do that too and off to Dallas it went. They loved it.

My next commission to Lisa was for her to do 3 pets. I sent the photos. She also came to the house to take photos of one of them so that she could capture what she wanted. If you are local this works great, but if not I am sure you and her can work it out somehow.

The first one is Karma.

His name is TC. He has beautiful features. It has been some time since Lisa had done a cat. She told me the whiskers are usually the hardest. But following you will see my photo and her painting.

Her third subject was Lucky. He is spunky, loves to chase and at times even wonders around his neck of the woods. For him, Lisa came to the house to take a better photo.

First impression was that Lisa truly captured the soul of these pets. The eyes are the windows to the heart and soul and she was able to embodied such a feeling that when you see them you know it is them.

Pickled Shrimp, Recipe, Easy, A Collection of Recipes II, The Art of Wining and Dining, Southern Delaware, Delaware Beaches

In 1997 my children went to Worcester Country School in Berlin, MD. Since then the school is now known as Worcester Preparatory School.

Over the years a lot of parents were involved in the school and I was one of them. Book fairs, galas, Christmas Programs, Reading Programs, Teacher Appreciation Luncheons, etc. etc.

Years before my time the school had published a cookbook called A Collection of Recipes. It was as I mentioned above 1997 and the Parents Association decided to do another cookbook called A Collection of Recipes II.

As you can see the book has been used over the years. I was the Chairperson on this journey that took many months with parents giving us their best recipes. It took a school not a village to complete this project.

I don’t think the book is available anymore. Parents supported this book and it was a great success. The book is probably in your cabinet, but I keep my handy because the recipes are really good. I still feel strong about those words in the dedication that said “But food not only nourishes our minds and bodies. Food serves as a way for people to come together — sharing ideas, experiences and cultures”.

Tonight I made a recipe from this book called Pickled Shrimp. I was invited to a friend’s house. Pickled Shrimp is an easy recipe and it is usually liked by everyone. You can serve it year-round.

1 pound medium shrimp, uncooked

1 tablespoon pickling spices

1 tablespoon Dijon style mustard

1 teaspoon prepared horseradish

1/4 cup vegetable oil

1/2 teaspoon salt

1/4 teaspoon celery salt

1/2 white wine vinegar

2 green onions sliced, including the greens

Pull shrimp from shells. Discard shells. I bought shrimp already peeled and I just pulled the tails out. Make sure if you buy frozen shrimp to defrost them.

In a 2-quart saucepan, cover shrimp and pickling spices with water. Bring to a boil; simmer over medium heat about 2 minutes. Strain water leaving spices on shrimp. Set aside.

In a small bowl combine mustard, horseradish, oil, salt, celery salt, vinegar and onions. Pour over drained shrimp. Cover and refrigerate 6 hours or overnight. The longer you marinate it the better they taste. Pour in a pretty bowl with the sauce and enjoy. Serve cold.

This recipe could easily be doubled, as well.

My late mother in law, Louise, was a great cook. Many years ago she made a cookbook just for the girls and boys in the family. Every Christmas we would get an insert. She called this cookbook: Recipes, Begged, Borrowed, & Stolen. The Ratatouille is from her cookbook and it is prepared skillet style.

This is one of those dishes that you can prepare year round. But, in the summer vegetables are so beautiful and delicious that it is probably the best time of the year to make it. Those bright colors shine in this recipe.

Some people consider it a stew. Olive oil, garlic and herbs add so much flavor to the Ratatouille.

Following is the recipe. Hope you like it.

RATATOUILLE

1eggplant, peeled and cut into cubes. (I did not peel mine)

3 medium squash – zucchini, sliced

2 large onions – chopped

1 clove garlic – minced

1 large can tomatoes – or several fresh ones ( I used the fresh ones)

1 green pepper – chopped

1 small jar of pimiento, juice included

1/3 cup olive oil

1 1/2 tsp. salt

1/2 tsp. cumin

1/2 tsp. oregano

1/2 tsp. marjoram

1/2 tsp. dill seeds

In olive oil saute onions for a minute or so, and add rest of the vegetables and spices. Stir well and simmer vegetable mixture for as long as you wish, stirring occasionally.

It is good to cook it for a long time to get those veggies to soften, but do not let them stick.


You can eat the Ratatouille as a side dish, main dish, over pasta, over polenta like I did, as an appetizer with crackers. Add a dash of hot sauce for some kick. In other words, make this recipe your own.


You can double the recipe. Enjoy!!

A few months ago I needed a mover. As it is usually the case a friend gave me the name of Mary Nicholson who is the owner of Mary’s Touch. Her company, Mary’s Touch Moving & Packing, LLC specializes in new homes, storage and retirement homes. Tel. 302-745-1272.

Word of mouth is the best advertising you can get. You are happy with the work, you will definitely, pass the word around. I have been meaning to write a post on Mary because they were true professionals. At some point or another everyone needs a mover that will pack and move your treasures to either another home or to a storage unit.

I got into not eating meat on Monday.  Following the Meatless Monday campaign if you want to know.  This is an international campaign nonetheless.  It is just a way of not eating meat one day of the week to improve your health.  This organization was founded in 2003.  There is also a Facebook Page called Meatless Monday. A few years ago I was visiting my cousins on the island of Culebra.  Gorgeous beaches, beautiful scenery.  On the photo a look at Luis Pena from their balconies.  One of the recipes they prepared was a Spinach Pie.  Not only was it good, but it was so easy with 5 ingredients.  The chopped frozen spinach I was buying for this recipe had a lot of water but I found a few months ago a spinach that is steamable and to tell you the truth it is so much better.  You can get it in all supermarkets.

 

I have shared this recipe on my website before so I decided to do it again as I remembered that this summer, here in Rehoboth Beach, Sharon, Amantha, Debbie and I would have impromptu dinners on the beach. This is one of the recipes I took.  You can eat it hot, warm, room temperature or even cold.

Recipe – Spinach Pie

1 package or bag of spinach – 10 ounces

1 block cream cheese.  You can use the less fat one or regular one.

1 onion (Cut in chunks.)

4 eggs

1 cup Parmesan cheese

Pre heat oven to 350 degrees.  Grease lightly a pie dish.  I use a glass one.  Let spinach defrost and squeeze it to get all the water out.  Take the cream cheese out of the refrigerator and let it soften a bit.

In a blender put eggs, spinach, onion, and cream cheese.  Add salt and pepper to taste.  I usually add just pepper since the cheese has plenty of salt.  Blend.  Pour into a pie dish.

Place in the oven for about 10 to 12 minutes. Sprinkle Parmesan cheese on top to cover.  The cheese will make a crust and will add taste to the pie. Don’t be shy and sprinkle on.

It will take another half hour or so to be ready.  Test it with a knife and if comes out clean then it is ready.  It should have a nice rich crust.

You can really use this spinach pie for breakfast, lunch or dinner. And even for an appetizer.  I would cut in squares instead of wedges if that is the case.

When I joined my friends this summer for our Rehoboth Beach dinners, I think they loved it.  Don’t you think?  They are smiling!

When we share a meal with friends, it is so much more than food (really?)…and, when we share it with girlfriends, and for purposes of this post, like the Swirl Girls, then it is really priceless.  Some of us have known each other for years while others, are getting to know each other very fast.  Here we were trying to figure out which table would be the best one.  Right after Memorial week-end we had the place to ourselves since we arrived early.  We did not want a big table.  We like to be cozy in order to get that conversation going.  The group had just gone to watch the Book Club, if you get my drift.

The majority of us had not yet dined at Our Harvest.  This restaurant located at 1106 Coastal Hwy., Fenwick Island, DE 19944, opened last year.  Every day, at 5:00 p.m., you can come in and experience a way of eating that has become so popular in the U. S.  Telephone is 302-581-0377.  No reservations are accepted.  The website is http://www.ourharvestde.com.

As the season progresses please have in mind when you would like to eat.  You have to have a plan because it gets crowded at the Delaware Beaches.  If you arrive and there is a wait, you could have cocktails, relaxing in their bar or in any of the very comfortable leather sofas.

There is an open concept kitchen.  You really can see how the kitchen is running.  I have to tell you that I probably should have come to try Our Harvest last year.  I love their sister restaurant, Liquid Assets, in Ocean City, MD, and I did not want to like this one more.  Guess what?  They are completely different.

The menu was presented and our server knew the menu well.  She explained the concept of eating small plates and shareables.  At that moment all we wanted was some wine.  Having watched the Book Club, wine was very much consumed by the characters.  It was time to relax.  The wine that you see at the table was from South Africa.  A full bodied Merlot called Immortal Hero.

At first you are a bit overwhelmed because you, actually, do not know how much to order for the table.  And, we all have our likes and dislikes.  We managed to do a good job and we were all very pleased with how the evening was progressing.  Could not believe Jane Fonda looks that good at 81… I know, I know.

We all decided to have a small plate to start our dining experience.  Every time I see the offering of a Grilled Caesar Salad, I order it.  Years ago I had it at a restaurant in Hagerstown, Maryland.  Since then, a few have gotten close at how good that one tasted so I wanted to see how this one would be, more so because it had Boquerones which are white anchovies.  They are very mild and usually they are marinated in vinegar.  It gives the salad a kick.  I will have to say that this Caesar was excellent.

Others ordered the Salt Roasted Beets & Two Cheeses.  Served on a wooden plank it had whipped ricotta, Stracciatella, local greens, black pepper and beet vinaigrette. Stracciatella cheese is produced from Italian buffalo milk in the southern Italian region of Apulia.  They use a stretching and shredding technique.  This particular small plate could have been shared by two people.

We ordered the Spring Harvest Flatbread.  A crispy crust filled with local peas, ramps, morel mushrooms, local asparagus, ricotta, gruyere mornay, green garlic pesto and crispy capers.  Ramps are a special type of wild onion, found in eastern Canada and U.S.  And a Gruyere mornay is a bechamel sauce that has Gruyere cheese added to it.  It was delicious but to tell you the truth we probably ordered too much.  Not that we did not eat it, by the way.

“Friendship is a delicious meal to be shared off one large plate.”  So, we decided to order our large plates.  This particular dish I truly loved.  It was called the Vegan Feast.  It was a whole wood fire roasted head of cauliflower, benne cashew crumb, and a lemon garlic vegan aioli.  At first we thought it was cheese but it was the benne cashew crumb. Cashews are lower in fat than other nuts. You can find online a lot of recipes for this vegan seed.

A very popular dish at Our Harvest is a whole Amish air chilled chicken…Arnold Palmer brine, (sweet tea and lemonade brine chicken, I believe), wood fired with lemon and rosemary.  Liquid Assets has an amazing chicken, as well.  Both chickens are completely different and delicious in more ways than one. We ordered TWO.

Needless to say, no need for dessert.  We decided that definitely we would be back.  Thanks to our server and also to the hostess that so graciously explained to me how the restaurant worked.

And so I end my post with this quote from John Lanchester….”Hospitality is central to the restaurant business, yet it’s a hard idea to define precisely.  Most, it involves being nice to people and making them feel welcome.  You notice it when it’s there, and you particularly notice it when it isn’t.  A single significant lapse in this area can be your dominant impression of an entire meal.”

In 2006 Rooster’s Nest opened its doors and it has become a must stop kind of a shop.  It is located at the Bayville Shopping Center on 37244 Lighthouse Rd., #108 in West Fenwick Island.  Easy to get to from all Delaware Beaches and Ocean City, Maryland.  Tel 302-436-1848.  Website?  http://www.roostersnest.com.

The Propietors are Sally Welsh and Bill Shoemaker.  You can find find gifts, home furnishing and one of a kind pieces.  All under one roof with very good price points.

So the other day I took a trip from Rehoboth to see what they were showing for Easter.  Weather is getting warmer, thank God, and Spring is here!!  That means a lot of us might want to refresh that certain room in the house, or buy something for friends’ birthdays; plenty of weddings are coming up.  Sally told me that they had just finished redoing the store.  The calm colors on the walls and the repositioning of furniture, it actually, makes it look bigger.  They have so many neat things.

Sally pointed to me these birdhouses she had just gotten in. And the little shoes that could be displayed in so many ways.

Love the forever greenery.  This is new to the store.

Paper placemats and table runners.  Are they are trend or are they here to stay?  They are sold in pads and there is so much to choose from for every occasion.  They look great and they are not that expensive, either.  You can use them daily, for small gatherings or big affairs.  And, they can transform a table from boring to super fun and elegant, as well.  And when finished, just throw them away.  Rooster’s Nest has some really fun ones.  They also have table runners.

Rooster’s Nest has a new line of bags….Katie Loxton from London. So affordable. Good looking too.  Fun, small bags that convey a message to a special friend, a mother, and for bridesmaids.

I toured the store with nothing in mind to buy but ended up getting a few things.  You cannot resist the tempetation.  Love the colors of blues for the summer.

The line of jewelry by Julie Vos is beautiful.  It is a little bit more pricey and the reason for that is that they are made of semi-precious stones, pearls and imported glass.  It is hand-set in 24k gold plate so it will not tarnish.  Made in the U.S.A.  The right accessory can make of break an outfit.  Keep that in mind.

Nuevo Mundo Alpaca, Alpaca Farm, Selbyville, Delaware, Delaware Beaches, Southern Delaware

Here we are.  We are fairly new to Selbyville.  We are Alpacas.  Along with LLamas we are family members of the camels but we do not have that hump.  We are natives to America and we are known as animals of the new world.  Get it?  Nuevo Mundo.

I arrived at Jose Palma and Elizabeth Ferguson with my friend, Jody.  She has known Liz for some time.  Jose and Liz moved to Selbyville from Kentucky.  When asking them if it was because of low property taxes, they said no.  It was just a random choice after looking at several properties.  Both are extremely friendly and generous with their time.  This is a new business for them but they are thoroughly enjoying this new journey.

On the website Liz is going to be introducing their Alpacas.  The first one being introduced is Tempest.  She is a 5 year old female.  On the photos that I took I am not sure which one she was but on the following photo it might be the one on the right.  The brown cria was a doll.

Alpacas and Llamas are natives to the Andes.  The Llama is the bigger one.  The Alpaca is smaller and compact.  Here is Liz feeding them.  They are friendly but cautious.  And like I told my friend Jody….they do spit.

Jose and Liz are introducing their Alpacas to shows and competitions.  Something completely new to them.  On the farm their rescued Great Pyrenees keep watch over the Alpcas.

During beautiful weather the Alpacas enjoy the gorgeousl Southern Delaware sunshine.  But during inclement weather they have their barn for much needed shelter.

There is more to Nuevo Mundo Alpaca…..chickens!!  Their chicken coop is precious.  And Jose and Liz’s pooch thinks he owns them.

Liz and Jose are learning everything Alpaca.  The fleece is the natural fiber harvested from an alpaca.  It is soft, durable and luxurious; a silky natural fiber.
