Rehoboth Beach Eats! Cornish Game Hens, Prosciutto, Pickled Figs, Thanks Wally!! Tulip, Rehoboth Beach, Delaware Beaches…Yum!!
Let’s start with homegrown figs…my own. Over the years I have talked about my figs until blue in the face. There are years where I have had so many that it was even hard to give them away.
So, I gave a huge bowl of figs to Wally. He owns Tulip, located at 20819 Highway One (Coastal Highway) in Rehoboth Beach, Delaware. Tel. 302-226-2696. Website? httpo://www.tulipltd.com.
Besides working his store, Wally’s other passion is canning. Surprise surprise!!….His pickled figs this year were called Glorious Pickled Figs. And, how lucky I was to get some.
The recipe of Cornish Game Hens with Prosciutto and Pickled Figs turned out to be so easy….I did not have to do much.
I roasted the hens on a 350 degree convection oven until they were nice and crispy….about 40 minutes. These hens were fat, and all I had to do is baste them a bit with butter, paprika, and spices.
I took them out of the oven and cut them in half and draped the prosciutto over each half. Placed figs and juice all over them and placed in the middle rack of the oven. Then, the oven went on broil until the ham started to brown. It took about 10 to 15 minutes.
The flavors were amazing, salty, sweet, mild….and very juicy. Add an acorn squash, veggies and you have an elegant meal.

Cornish Hens looks delicious. Any chance I can pick a few figs from your tree this weeki? Please and Thanks!!! I missed getting them this year and of course, not a fig on ours…
