“Easter Saturday”, A Day Early, Barbecuing, Peeps, Rehoboth Beach, Delaware Beaches
The sun was setting and the golf course was quiet. Easter came a day early in my household and with such a beautiful day at the Delaware Beaches…it called for a cook-out.
Charcoal is my favorite; the Weber grill was still standing after all the storms we have had this winter. The fire was hot; I had to let it calm down a bit.
A simple menu was going to make the day. Lamb ribs, marinated for an hour or so; then, a dry rub of whatever seasonings I had in the kitchen.
Finally, the ribs were on the grill and they got my full attention. Hopefully, I was not going to overcook them.
They actually turned out perfect; medium rare.
Side dishes of warm, potato salad made with gourmet mixed potatoes, mayo, tarragon vinegar, and tarragon leaves. The fresh sauteed spinach and grape tomatoes completed the dinner and added color to the plate.
For dessert, the peeps made an appearance. They had been getting ready for a couple of weeks; stale and crusty is when they are at their best. And, Happy 60th Birthday Peeps!…These sugary marshmallow delicacies were born in 1953!!
