Mini Chocolate Brownies, Easy, Flourless…Gluten Free!!!

Bursting with flavor these mini chocolate brownies were so easy to make.  You are not using flour.  Instead you will be using cornstarch.  You will also be using cocoa, and unsalted butter.  I made the recipe using butter, but you can also use any of the other spreads available on the market.

They are chewy and in my book, a definite winner.  Here is the recipe.

Mini Chocolate Brownies….Gluten Free!!

Vegetable oil spray (gluten free) or just use vegetable oil when oiling the pan

1/4 cup cornstarch, plus a little bit extra for dusting the baking pan

1 stick unsalted butter

1/4 cup unsweetened cocoa powder.  I used Hershey’s European style Dutch processed cocoa.  This is a darker cocoa with a more mellow chocolate flavor.  Make it your own and use whichever you like best.

1/2 cup firmly packed regular brown sugar

1/2 cup granulated sugar

1 teaspoon pure vanilla extract

2 large eggs

1/2 teaspoon salt (I used 1/4 tsp.)

1/2 cup semisweet chocolate chips

Pre-heat oven to 350 degrees.  Oil 8 x 8 pan and dust with cornstarch.  Set aside.

Place butter in a medium size saucepan over medium to low heat and melt.  Add cocoa powder and stir until thickened and smooth.  This will take about 20 to 30 seconds.  Remove the pan from the heat and stir in the sugars, and vanilla until smooth.

Break the eggs into the pan and stir to combine completely.

Add the 1/4 cup of cornstarch, and the salt.  Stir until the batter is smooth.  Fold in chocolate chips.

Pour batter into the prepared pan.  Bake for 30 minutes until the edges are firm and the top is shiny.

Remove from the oven and let them cool for about 1 hour.  I could not wait that long so I cut them way before that.

You might want to cut them a little bigger and serve them with ice cream.  They do keep well and all you have to do is wrap them and keep them at room temperature.

They are delicious when they are warm.  Just  put them in a microwave safe plate and heat them for a few seconds.

The reason they are minis is because you just won’t feel as guilty.  Like that makes a difference!
