I have a friend that every time I put a recipe for “Meatless Monday” she always comments on my Facebook Page “I rather eat a hamburger.” She rarely comments, but on that day she does. This recipe is for her because Stuffed Pork is what’s for dinner.
On this recipe I measured everything with 1/4 cup. As usual, you can make your recipes your own…..add a little bit of this or a little bit of that.
YUMMY STUFFED PORK
1 1/2 lbs. pork loin (This one was already seasoned…that’s does not matter with this recipe. That’s all the grocery store had that day.)
1/4 cup dried cranberries
1/4 cup raisins
1/4 cup dried figs
1/4 cup crushed pineapple, drained with juice reserved
pepper to taste
1 tsp. rosemary
1/4 cup whole cranberry sauce
1/4 cup of fig preserves
1/4 cup 100% Pomegranate Juice
Kitchen twine
Pre-heat the oven to 350 degrees.
The pork loin had a meat thermometer so I took it out and proceeded to make a slit on top not all the way to the bottom and not all the way (almost) to the sides. This is done to create a pocket for the filling.
In a bowl, mix the cranberries, raisins, figs, pepper, rosemary, and crushed pineapple. This is your filling…packed that loin up. Your fingers are the best tool for this.
Cut the twine in order to wrap the pork loin so that the filling stays put while cooking. Place in a baking dish. I inserted the meat thermometer on the side.
Bake for about 20 minutes. While it is cooking, make the sauce.
In a bowl mix the Pomegranate juice, the cranberry sauce, fig preserves, and reserved pineapple juice. Take the pork loin out of the oven and spoon the sauce on. Put back in the oven for another 25 minutes or so or until the meat thermomether pops.
Take it out and let it rest for a few minutes before slicing and taking the twine and thermometer out.
Slice and enjoy. This dish can go well with mashers, corn pudding or corn bread, green beans, a salad….Leftovers? Sandwich would be my suggestion…with some mustard, as well.
Note: When slicing just do it carefully. You might have to arrange it a bit if filling falls off somewhat. If you want more sauce just mix the ingredients on a small saucepan, heat and pour over.

I believe the photo is circa 1906 on Rehoboth Beach, Delaware….an award winning Boardwalk. Since those times it has been the life of the town, strolling the boards with the Atlantic Ocean as the view!!
We have come a long way, but still the Rehoboth Beach Boardwalk offers its visitors and residents a relaxing gathering place. Some walk it, jog it, or even bring their dogs to it.
In the evenings, summer visitors gather at the Boardwalk for rides, games, and favorite Boardwalk Grub!!
WALKING TOUR; A GENTLE STROLL
Thursday, October 9th – Last walking tour…A 45 minute gentle stroll around Downtown Rehoboth Beach. It starts at 9 a.m. at the Bandstand. The cost? Only $10. Reservations are required and you may do so by calling the Rehoboth Beach Museum at 302-227-7310. The tour provides general information about the history of Rehoboth Beach, while touching on several of the storms that have shaped the coastline and this beachfront town. Walkers will be led from the Bandstand along Rehoboth Avenue, pointing out landmarks and providing photos of historical sites and events.
So, look for the lady with the PINK Parasol at the Bandstand. You can bring your own too, if you have one to show it off!! They think they have to most awesome one…..they are just sayin’.
JOLLY TROLLEY HISTORY TOURS
Just like they have been doing for the past few years, The Jolly Trolley joined forces this summer and fall with the Rehoboth Beach Museum to offer special tours of the Downtown area. From the comfort of the inside of The Jolly Trolley you explore the town. The cost is $10, cash only, please.
Two tours will be taking place on Friday, October 24th, which is the beginning of the Sea Witch Festival. One tour will start at 9 a.m. and another will start at 10 a.m. Reservations are required. Please do so by calling 302-227-7310.

Players will take the audience back to a time when people gathered around the radio and listened to mysteries and other programs loved by many. Lewes, Delaware is Sussex County’s northernmost coastal town. It was founded in 1631 and it is the oldest settlement in Delaware. That’s why the nickname of “The First Town in The First State” is so well known.
Lewes is in the perfect location in Southern Delaware. It provides access to the Delaware Bay and Atlantic Ocean. I don’t know if you know that in 2006 Lewes was selected by the National Trust for Historic Preservation as one of America’s “Dozen Distinctive Destinations”.
It is a year round community and the town does look good all the time. Plenty of shops, restaurants, activities and entertainment for the residents and visitors alike.

FRIDAY, SATURDAY, SUNDAY, 10/3, 10/4, 10/5 – LEWES MERCHANTS’ FALL SIDEWALK SALE – Sales galore, plenty of bargains, not only in Lewes, but in Rehoboth Beach, and Dewey Beach, as well. You would not believe, people do plan for these sales at the beach. Great time to enjoy a fall week-end and grab those essentials. Stores surrounding the Lewes Commercial Historic District will be ready!! I hope you are too and the stores do open at 10 a.m.
SATURDAY, 10/4 – LEWES IN BLOOM’S FALL PLANT SALE – 8:30 a.m. until 4:00 p.m. at 2nd & Banks Streets in front of the Citizens Bank. Lewes looks so nice with the help of this organization. Those in attendance will be able to interact with researchers, tour ships, try hands-on activities, and attend presentations on a wide range of topics. Family friendly activities will be: an event-wide treasure hunt for answers to questions about the environment and Coast Day exhibits. Children can meet sea-dwelling animals such as horseshoe crabs and dogfish sharks at the critter touch tanks. Live music, vendor displays, and seafood favorites…..food, including the Crab Cake Cook-Off and the Seafood Chowder Challenge!!

Manayunk is located in the northwestern section of the City of Philadelphia and on the banks of the Schuykill River. For years it was just there and in need of TLC…not anymore. It is a city capturing the young professionals, single and with families, moving to this town that has shops, restaurants, bars, and a place to enjoy the outdoors….just a few miles from everything Philadelphia has to offer.
Main Street is long covering more than several blocks. Restaurants have outdoor seatings, perfect for when the weather is nice. To know more about Manayunk, please visit http://www.manayunk.com.
Manayunk’s Annual Streat Food Festival was Saturday, September 28th. This was also the opening of their Restaurant Week, which will go on until Friday, October 10th. Restaurant Week offers 3 courses and 3 prices. Visit the website above mentioned for more information and to find out the participating restaurants.
I arrived at the Streat Festival early so as to find parking which, actually, ended up being very easy. Everything was very well organized. Saturday’s big event was the Food Trucks. Philadelphia is known for its amazing food. There were about 40 food trucks lining Main Street. Some people knew exactly where they were going….they had their favorites. I had my son, Michael, to show me the way.
Food trucks are mobile restaurants, or mobile cuisine. The trend continues to grow and there are no signs of them slowing down. They say that food trucks are restaurants’ worst nightmare. In Philly you can find them around all the universities, feeding those hungry students.
Yoga on the Street…..Was I supposed to join them before hitting the food trucks? Plenty of others did.
Musicians were available to entertain the crowds.
And, as soon as the Beer Garden opened…the crowds followed. It was such a gorgeous day. Perfect for a festival.
Mama’s Meat Ball was a winner. That’s the first Food Truck we hit….my son said that their slider meatballs are just awesome. Their address is 1426 Frankford Avenue, Philadelphia, PA 19125. Tel. 267-530-1493. Website? http://www.mamasmeatballphilly.com. You can also find them on Facebook.
The following photo shows what we ordered: On the left is Mama’s Ball…beef, pork, veal mix, topped with arugula and Parmesan. On the right is my Apple Bomb made with 100% turkey mixed with sauteed spinach, Granny Smith, stuffred with roasted red pepper, Asiago, and topped with spicy Fresno Chili-Apple Chutney. Totally the best. People sitting around were raving about them, as well.
The smallest Food Truck was the Korean Truck Kami….small but popular. You can find Kami at N. 33rd St. at Arch St., Philadelphia, PA 19104. Tel. 215-555-5555. On Facebook, as well.
Another most popular food truck and one we did not try was Mac Mart. It is Philadelphia’s only Mac ‘n Cheese Food Truck. They are usually located by Drexel University. Tel. 267-908-5662 Website? http://www.macmartcart.com Find them on Facebook and Twitter.
We decided to stop at Delicias. Their specialty? Latin Food and Arepas. Arepas are grilled corn patties that can be filled with almost anything you can think of.
The first photo shows on the left an Arepa filled with Shredded Chicken tossed in guacamole and mayo. On the right is my own which had Shredded Beef, sweet plantains, black beans and Cotija Cheese. This was an expensive Food Truck. Both of those, which by the way, were completely filled and heavy, plus 2 waters…..a total price of $26!!

We were totally satisfied, but continued walking Main Street. I found Sweet Elizabeth’s Edible Art to be at the perfect location on Main Street at 4409 Maint St…… I will have to visit them another time. In the meantime, their edible art looked beautiful. Philadelphia has its first Fashion Truck….it was also mingling with the Food Trucks. It is called Smak Parlour Fashion Truck. http://www.smakparlour.com.
This is a girly, glam and funky truck. The Boutique is on 219 Market Street in Old City. The Fashion Truck travels to events throughout the city, but it can also come to your home, office or party. It is a fun shopping extravaganza. Smak Parlour has also its own line of in-house designed clothing. Visit the above mentioned website to see where they will be going next.
It was time to head back to Rehoboth Beach, Delaware…..Main Street was so crowded and I wanted to have a head start….the Eagles were playing, NASCAR was also in Dover….Yikes….it took me a long time to get home but not as long as the ones that were heading north.
Note: The Streat Festival is around the same time each year. Save the Date…it is worth going, especially if you like to Eat…On the STREAT!!

I remember it like it was yesterday, except it was at the beginning of June, this year. It was promising to be a wonderful week in Bethany Beach, Delaware. Little Pink Houses of Hope had everything in place thanks to the organization of Annie Raskauskas and Stacy Shepps. It took plenty of help to make sure that it would go smoothly. The families coming in did not know one another.
The community stood behind this organization that has been holding retreats in Bethany Beach for families of those afflicted with breast cancer. Breast cancer, just like many chronic diseases, not only afflict the person, but also the whole family. In Bethany Beach houses and townhouses were donated so that the families could come, free of charge, relax and rejuvenate at the beach.
They were going to be busy too….plenty of activities, get togethers, fun on the sand at the water’s edge, cookouts, you name it. It was fun!!

Bethany Beach, Delaware, is one of the locations, but they are also held in other states, as well.

The families arrived at the beginning of June as complete strangers and by the end of the week, they were a united front. It was really heartwarming to see. There were smiles and plenty of thanks to all that had worked all week to make them forget breast cancer.
We were going Deep Sea Fishing!! The Judy V was taking us out. Well, it was an experience. Here we are about to take off from the Indian River Marina. Pink is the signature color for breast cancer….wearing pink Butter Shades.
Off we went. It was beautiful. As you know to get out to do any deep sea fishing in coastal Delaware you need to go way out to sea. So far so good. From the boat plenty of photos were taken.
The kids were thrilled. They had the bait ready and a few caught something.
   
Right before some got seasick, we still had time for more photos. Not fun getting seasick, but at times it cannot be helped. We cut the fishing expedition short, because we still had so many things to do on land….like picnic, and later on a pig roast.
The picnic was very nice and we had it at the Indian River Marina. Yeap….from the fishing trip to eating!! Sandwiches, cupcakes, and fruit!!
Nap time until the Pig Roast and a farewell evening event at the beach….oceanfront!!
The house was in a festive mood. A Pig Roast and games on the beach. The evening went smoothly and everyone attended.
The families had even time for a birthday celebration!!
Then, it was time to hit the beach for some family fun time with the kids!! Carol was the organizer. And she had her hands full. These Little Pinks had so much energy and it was great to see them let loose.
The pinata and other games were a hit.
 
It was time to say “until we meet again”. The evening was emotional for so many of the families. Their bond was stronger. Many memories were made on this particular week.
